Ingredients

  • 1 tbsp Water
  • 1 1/4 liter full cream Milk
  • 2~3 tbsp Curd
  • 1/4 cup / 50 gm powdered Sugar
  • 1 drop Kewra essence

Instructions

Step 1: Add a little water in a pan and add milk.

Step 2: Heat up milk on medium heat and bring it to boil. Stir the milk well after every 5 minutes.

Step 3: When malai begins to float on the milk, turn the gas off and let the milk cool down.

Step 4: Transfer the milk into freeze for about 2-3 hours so that malai will thicken up.

Step 5: Turn the gas on and heat up milk until lukewarm.

Step 6: Break the malai along the edge at few places and add curd in it.

Step 7: Mix well. Take care that the layer of malai won’t break.

Step 8: Place the pan at a warm place overnight so that curd will set.

Step 9: When the curd sets well, transfer the curd into freeze preferably overnight or for 2-3 hours or at least an hour so that the curd will be completely set.

Step 10: Carefully remove the layer of malai and keep it aside.

Step 11: Take the curd out into a bowl and add powdered sugar and kewra essence.

Step 12: Churn the curd well with wooden churner. No lumps of curd should be left in the lassi.

Step 13: Serve lassi and add a layer of malai on it. Lassi is ready.

Notes

  • You can add a little water or buttermilk or milk in the curd to adjust the consistency if you want while churning.
  • You can add different flavors in this lassi to make flavored lassi.
