So, here I am with this nice recipe. This delicious, deep-fried fritter is a must-have item on any Navaratri Vrat menu. The Upwas Batata Vada is not just a snack; it’s an energizing and wholesome meal, offering a comforting burst of flavor to sustain devotees during their fast.

It’s a flavorful, power-packed ball of mashed potatoes seasoned with ginger, green chili and lemon juice. Instead of regular flour, the filling is coated in a batter of Singhare ka Atta (water chestnut flour) or Rajgira Atta (amaranth flour), making it naturally gluten-free and entirely suitable for an Upwas (fast). It’s traditionally fried in pure ghee or peanut oil and seasoned only with Sendha Namak (rock salt), adhering to the strict Sattvic dietary rules of the nine-day festival.

Ingredients

  • 2~3 tsp Ghee
  • 1/2 tsp Cumin seeds
  • 5 chopped Green chilies
  • 1 tsp grated Ginger
  • 5 boiled and peeled Potatoes
  • 1/2 Lemon juice
  • Salt to taste
  • 1/2 cup Rajgira flour
  • 1 tbsp Sabudana flour
  • 1 tbsp Varai flour
  • Salt to taste
  • 1 cup Water
  • Oil for frying

Instructions

Step 1: Heat up ghee in a pan and add cumin seeds.

Step 2: When cumin seeds splutter, add green chilies and ginger and fry for few seconds.

Step 3: Turn the gas off and add potatoes. Mash the potatoes with hand and add them.

Step 4: Add lemon juice and salt and mix everything well together. Stuffing is ready.

Step 5: For making batter, mix rajgira flour, sabudana flour, varai flour and salt well together and add a little water at a time to make a little thick batter. No lumps of the flour should be formed.

Step 6: Cover and rest the batter for 5 minutes.

Step 7: Roll out vade from the stuffing mixture. You can decide the size and shape of vada.

Step 8: Heat up oil on medium heat and when the oil is hot enough, increase the heat to medium to high.

Step 9: Mix the batter well once and coat each vada well with the batter.

Step 10: Drop vade in hot oil and fry well on medium to high heat until they get nice golden color from both sides.

Step 11: When vade are fried well from one side, flip them over and fry well from other side too.

Step 12: When vade are fried well from both sides, take them out, drain excess oil and transfer them into a dish. Upasache batate vade are ready.

Notes

  • You can chop the potatoes or mash them if you want.
  • You can have it with upwas chutney or kishimbir or serve them with upasachi amti!!
