Ingredients

  • 1 cup Fine semolina
  • ​1/2 cup Curd
  • 1/2 cup Water
  • 1/4 cup Oil
  • ​1/2 cup Powdered sugar
  • 2 tbsp Milk powder
  • 1/4 tsp Salt
  • 1 tsp Vanilla essence
  • ​1 tsp Baking powder
  • 1/4 tsp Baking soda
  • 1 tsp Water
  • 1/2 cup Sugar
  • 1/2 cup Water
  • 1 pinch Saffron
  • 1 pinch Turmeric powder
  • 1 tbsp Pistachio slices

Instructions

Step 1: Take fine semolina in a mixing bowl.
Step 2: Add curd, water, oil, powdered sugar, milk powder, salt, and vanilla essence into the bowl.
Step 3: Mix all the ingredients thoroughly until a smooth and lump-free batter is formed.
Step 4: Cover the bowl with a lid and let the batter rest for 15 to 20 minutes so the semolina swells properly.
Step 5: Grease the small bowls with oil.
Step 6: Add baking powder and baking soda to the rested batter.
Step 7: Pour one teaspoon of water over the leavening agents to activate them and mix gently into the batter.
Step 8: Pour the batter into the greased small bowls leaving space at the top for the cake to rise.
Step 9: Tap the bowls gently on the kitchen counter to remove air bubbles.
Step 10: Pour the remaining batter into a baking tray.
Step 11: Remove the whistle and rubber gasket from the pressure cooker lid.
Step 12: Place a stand inside the heated pressure cooker, place a plate over it, and arrange the bowls on top.
Step 13: Close the lid and bake on medium flame for 20 to 25 minutes.
Step 14: Bake the cake tray in a preheated oven at 180°C for 20 minutes.
Step 15: Add sugar, water, and saffron to a pan over high heat until the sugar dissolves.
Step 16: Add a pinch of turmeric powder for color and simmer the syrup on low heat for 5 minutes until sticky.
Step 17: Turn off the heat and let the sugar syrup cool down.
Step 18: Remove the baked cakes from the cooker and oven, then let them cool down to room temperature.
Step 19: Run a knife around the edges of the bowls and unmold the cakes.
Step 20: Slice the tray cake into pieces.
Step 21: Pour the cooled sugar syrup over the cakes until fully absorbed.
Step 22: Garnish the cakes with pistachio slices before serving.
