In this recipe, there is demonstration of how to make a crispy Kokani-style Rohu fish fry using a quick premix paste that prevents spices from separating in hot oil. Fresh river fish pieces get thoroughly washed and coated evenly with a pre-blended spice mixture combined with a small amount of water. Shallow frying the coated pieces in hot oil yields a flavorful, golden-brown crust without requiring any semolina or flour coating.

Ingredients

  • 500~600 gm Rohu fish
  • 1 packet Kokani Fish Fry Premix
  • 1/4 cup Water
  • ​5~6 tbsp Oil

Instructions

Step 1: Wash Rohu fish pieces thoroughly with fresh water and drain all excess water completely using a basket.
​Step 2: Open 1 packet Kokani Fish Fry Premix and transfer it into a wide dish.
​Step 3: Add 1/4 cup Water into the premix and mix well to form a thick uniform masala paste.
​Step 4: Take cleaned Rohu fish pieces and coat both sides evenly with the prepared masala paste.
​Step 5: Heat 5~6 tbsp Oil in a pan until hot.
​Step 6: Place coated fish pieces carefully into hot oil and fry on medium heat for 2~3 minutes without touching.
​Step 7: Flip fish pieces gently to the other side using a spatula once bottom side gets cooked.
​Step 8: Fry the other side until fully cooked and crisp.
​Step 9: Remove fried fish from pan while draining excess oil and serve hot.

Notes

  • ​Garnish hot fish fry with fresh coriander leaves, bright lemon wedges, and thinly sliced red onion rings.
