​Solapur disco mirchi bhaji brings a completely unique twist to traditional fried street snacks. Thick green chillies get coated in a spiced gram flour batter before taking a brief dip in hot oil. Ingredients

  • ​1/2 cup Gram flour
  • 2 tbsp Rice flour
  • ​1 pinch Turmeric powder
  • ​1/2 cup Gram flour
  • ​1/2 tsp Carom seeds
  • ​1/2 tsp Salt
  • ​1/4 tsp Baking soda
  • ​1/2 cup Water
  • ​200 gm Green chillies
  • ​Oil for frying
  • ​1/4 tsp Red chilli powder
  • ​1/4 tsp Black salt
  • ​1/4 tsp Chaat masala
  • ​1/4 tsp Black pepper powder

Instructions

Step 1. Sift Gram flour and Rice flour into a bowl.
Step 2. Add Turmeric powder, Carom seeds, Salt, Baking soda, and Water to make a thick batter.
Step 3. Wash Green chillies, make a slit along the center, and remove seeds.
Step 4. Dip Green chillies into the batter to coat them properly.
Step 5. Drop coated chillies into hot Oil, fry for one minute, and remove onto a wire rack.
Step 6. Mix Red chilli powder, Black salt, Chaat masala, and Black pepper powder in a bowl.
Step 7. Slice the half-fried chillies into thick bite-sized rings.
Step 8. Drop the rings back into hot Oil and deep fry until golden brown and crispy.
Step 9. Remove fried rings onto a wire rack to drain excess Oil.
Step 10. Sprinkle the prepared spice mixture over hot crispy bhaji and serve.

Notes

  • Serve these fiery rings with cool sweet tamarind chutney or garlic peanut chutney.
  • ​Pair this crispy snack with a piping hot cup of masala chai for perfect evening comfort.
