Ingredients

  • 1/2 cup Jaggery
  • ​1/2 cup Water
  • ​2 cup Wheat flour
  • 2 tbsp Jowar flour
  • ​2 tbsp Gram flour
  • 1/2 tsp Salt
  • ​1/2 tsp Cardamom powder
  • ​1/4 tsp Nutmeg powder
  • ​2 tbsp Ghee
  • ​2 tbsp Sesame seeds

Instructions

​Step 1: Add Jaggery and Water into a pan and heat until Jaggery dissolves completely.
Step 2: Turn off the flame once the Jaggery syrup comes to a slight boil.
Step 3: Combine Wheat flour, Jowar flour, Gram flour, Salt, Cardamom powder, and Nutmeg powder in a large mixing bowl.
Step 4: Pour Ghee over the flour mixture followed by the warm Jaggery Water.
Step 5: Mix with a spoon initially to combine without burning hands.
Step 6: Knead into a soft, smooth dough once the mixture cools down slightly.
Step 7: Divide the dough into equal portions and shape them into round balls.
Step 8: Dust a dough ball with dry flour and roll it out partially.
Step 9: Spread Ghee over the rolled surface and sprinkle Sesame seeds evenly.
Step 10: Fold the dough over and roll it into a moderately thick flatbread.
Step 11: Heat a tawa on high flame and grease it lightly with Ghee.
Step 12: Place the flatbread on the hot tawa and roast on high heat.
Step 13: Flip over when light spots appear on the bottom and apply Ghee on top.
Step 14: Press gently and cook both sides until golden brown spots appear.
Step 15: Transfer cooked flatbread to a wire rack to cool down completely before storing.

  • Pair these soft sweet dashmis with spicy garlic peanut chutney or fresh yogurt for a mouthwatering sweet and savory contrast.
