Ingredients

Jwariche Ghavan

  • 2 cup Jwari flour
  • 1/4 cup Rice flour
  • 1/4 tsp Turmeric powder
  • 1 tsp Coriander powder
  • 1 tsp Red chili powder
  • 1/4 tsp Cumin seeds
  • 1/4 tsp Ajwain / Carom seeds
  • 1 tsp Ginger-Garlic-Green chili paste
  • Salt to taste
  • 3 1/2 cup Water
  • Finely chopped Fenugreek leaves
  • 1 finely chopped Tomato (Optional)
  • Oil as needed

Chutney

  • 1 tbsp Oil
  • 1 chopped Onion
  • 3~4 Garlic clives
  • Ginger knob
  • Small piece of Tamarind
  • 3 Green chilies
  • 1 tbsp roasted Chana dal
  • 2 tbsp roasted Peanut powder
  • Coriander leaves
  • Salt to taste
  • Water as needed
  • 1 tsp Oil
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • A pinch of Hing
  • Dry Red chilies
  • Curry leaves

Jwari ghavan and chutney

Instructions

Jwariche Ghavan

Step 1: Mix jwari flour, rice flour, turmeric powder, coriander powder, red chili powder, cumin seeds, ajwain, ginger-garlic-green chili paste and salt well together in a bowl and add water to make pouring consistency batter.

Step 2: Add fenugreek leaves and tomato and mix well. Batter is ready.

Step 3: Cover and rest the batter for about 10 minutes.

Step 4: Heat up a skillet on high heat and grease it well with oil.

Step 5: Mix the batter well once and pour it staring along the edge of the pan and end up at the center.

Step 6: When lower side is roasted well, gets nice brown color, flip the ghavan over and roast well from other side too.

Step 7: When the ghavan is roasted well from bothe sides, take it off on a wire rack. Ghavan is ready.

Chutney

Step 8: Heat up oil in a pan and add onion, ginger, garlic, tamarind and green chilies.

Step 9: Fry well until onion turns soft. The color of the onion should not change.

Step 10: Turn the gas off and let the mixture cool down.

Step 11: Add roasted chana dal and roasted peanut powder first into a blender jar and add the onion mixture.

Step 12: Add coriander leaves and salt and blend into as fine paste as possible.

Step 13: Add water and blend it well together into chutney.

Step 14: Take the chutney out into a bowl.

Step 15: For tadka heat up oil in a pan and add mustard seeds.

Step 16: When mustard seeds pop up, add cumin seeds, hing, dry red chilies and curry leaves and mix well.

Step 18: Add this tadka into the chutney and mix well. Chutney is ready.

Notes

  • Serve ghavan with chutney or any sauce
  • You can have the ghavan as it is.
  • You can make 16 ghavan of 10” diameter from the ingredients used.
