Ingredients

  • 3 cups Rice
  • 1 cup Urad dal
  • 1/2 tsp Fenugreek seeds
  • 1 cup Pohe / Flattened rice
  • Salt to taste
  • Water
  • Oil
  • Kanda lasun masala
  • A little Salt
  • Finely chopped Onion

Instructions

  • Take rice and add urad dal, fenugreek seeds and wash everything well with water for 3-4 times.
  • Soak it in enough water for about 5-6 hours.
  • Wash pohe really good 2-3 times with water.
  • Mix pohe into soaked dal and rice.
  • Drain water from the mixture.
  • Transfer the mixture into a blender jar and blender jar and blend dry first.
  • Then add a little water and blend into medium consistency, neither too coarse nor too smooth. Use minimum water while blending.
  • Transfer the batter into a pot.
  • Add salt and mix well.
  • Add water in blender jar and blend it once.
  • Transfer the water into the batter and mix everything well together.
  • This make the cleaning process of the blender jar much easier.
  • Cover and let the batter ferment 10-12 hours or overnight or until the batter rises to double.
  • Take the batter and mix it just once.
  • Grease the idly stand well with oil and add the batter in each mould.
  • Heat up about 1” water in idly cooker and transfer the stand into it.
  • Close the lid and steam on medium heat for about 15 minutes.
  • Take the stand out and take off each idly with the help of spoon.
  • Serve the idlies with sambar and chutney.
  • Heat up a pan on medium heat.
  • Brush oil on it and add batter at the center.
  • Spread it evenly to make dosa.
  • Make it even with a steel spatula and remove excess batter.
  • When lower side begins to get nice browning spread a little oil on the upper side.
  • Add dosa sabzi along and edge of the dosa and roll it.
  • Transfer the dosa into the serving dish.              
  • Serve the dosa with sambar and chutney.
  • Again spread oil on the pan to make uttapa.
  • Add batter at the center of the pan and spread it evenly.
  • Spread kanda lasun masala, salt, onion and spread a little oil along the edges.
  • You can add butter if you want.
  • When lower side gets nice browning flip the uttapa over and roast well form other side too for about 2-3 minutes.
  • When the other side also is roasted well, transfer the uttapa into a serving dish.
  • Serve uttapa with sambar and chutney.
