Ingredients

  • 1 1/2~2 tbsp Ghee
  • 1 cup Varai / Samo rice
  • Grated fresh Coconut
  • 1 1/5 cup hot Water
  • 3/4 cup Gudh
  • 1/4 cup Sugar
  • Cardamom powder
  • Ghee
  • Sliced Pistachios
  • Grated fresh Coconut
  • Dry Rose petals (Optional)

Upwasachi Khantoli

Instructions

Step 1: Heat up a pan on medium heat and add ghee.

Step 2: Wash varai well 2-3 times with water and drain all the water from it.

Step 3: Add the washed varai and fry on medium heat until it gets light pink color.

Step 4: Add fresh coconut and mix well.

Step 5: Add hot water and mix well.

Step 6: Cover and steam the mixture on medium heat until all the water is absorbed into it.

Step 7: Add gudh, sugar and cardamom powder and mix well.

Step 8: Cover and steam the mixture until gudh melts.

Step 9: Grease a deep dish well with ghee and sprinkle pistachios, fresh coconut and dry rose petals in it.

Step 10: Open the lid and mix well once.

Step 11: Transfer the mixture into the dish and spread It evenly.

Step 12: Let it set for a while and cut it into pieces.

Step 13: When khantoli cools down completely take the pieces out and varaichi khantoli is ready.

Notes

  • Using rose petals is optional. You can skip it if you don’t want.
  • It remains good for about a day at room temperature and you can store it for about 2-3 days in freeze.
