Ingredients

  • 1 cup Water
  • ​Salt to taste
  • ​1 cup Rice flour
  • ​1 tsp Chili flakes
  • ​1 tsp Sesame seeds
  • ​1/2 tsp Kalonji
  • ​Oil for frying

Instructions

Step 1: Take water in a pan and bring it to a rolling boil.

​Step 2: Add salt to the boiling water and mix it well until it dissolves.

​Step 3: Add rice flour all at once to the boiling water and mix properly to avoid any lumps.

​Step 4: Turn off the flame.

​Step 5: Add kalonji, chili flakes, and sesame seeds into the mixture and mix everything well.

​Step 6: Gather the hot mixture together using a spoon and knead it into a smooth dough while it is still warm.

​Step 7: Make small equal sized balls out of the prepared dough.

​Step 8: Take a plastic sheet or butter paper and spray oil on both sides.

​Step 9: Place a dough ball on the sheet, cover it with the other side of the sheet, and press it flat using a flat bottomed bowl or dish to shape into a small poori.

​Step 10: Remove the shaped poori and place it on a pre-greased plate so it does not stick.

​Step 11: Heat oil in a pan on high flame until it is completely hot.

​Step 12: Slide the pooris carefully into the hot oil keeping some distance between them so they do not stick to each other.

​Step 13: Fry the pooris on high flame only and separate them gently if they stick together.

​Step 14: Flip the poori once one side is fried and fry the other side until it turns beautiful golden and crispy.

​Step 15: Remove the fried pooris from the oil and place them on a strainer or wire rack to drain the excess oil.

Notes

  • ​Toss a few fried curry leaves and crispy garlic cloves into the container to enhance the aroma and flavor of the snack

  • Sprinkle a bit of peri-peri masala, chaat masala, or roasted cumin powder immediately after frying to add an extra tangy kick.
