Tasty Soft Patwadi


​To prepare soft Patwadi without turning it dry or rubbery, gram flour batter is cooked in a spicy tempering of crushed garlic and green chillies. Steaming the mixture thoroughly guarantees flexible, melt-in-the-mouth vadya that never choke the throat.

Ingredients

  • 1 tbsp Oil
  • 1 tsp Mustard seeds
  • ​1 tsp Cumin seeds
  • ​1/4 tsp Asafoetida
  • ​4~5 Garlic cloves
  • ​2~3 Green chillies
  • ​1/2 tsp Turmeric powder
  • ​11/2 cup Gram flour
  • ​2 cup Water
  • ​1 tsp Salt
  • ​1/2 cup Fresh coriander leaves
  • ​2 tbsp Dry grated coconut
  • ​1 tbsp White sesame seeds

Instructions

​Step1: Heat oil in a pan.
Step2: Add mustard seeds and allow them to crackle.
Step3: Add cumin seeds, asafoetida, and coarsely crushed paste of garlic cloves and green chillies.
Step4: Sauté until fragrant.
Step5: Add turmeric powder.
Step6: Sift gram flour and mix with water to form a smooth lump-free batter.
Step7: Pour the batter into the pan.
Step8: Stir continuously to avoid lumps.
Step9: Add salt and fresh coriander leaves.
Step10: Stir until a thick dough forms.
Step11: Cover with a lid and steam on low flame for five to seven minutes.
Step12: Turn off heat.
Step13: Grease a plate with oil.
Step14: Transfer the hot mixture onto the greased plate immediately.
Step15: Spread the mixture evenly using hands or a flat bowl.
Step16: Sprinkle dry grated coconut, white sesame seeds, and fresh coriander leaves on top.
Step17: Press garnishes gently into the surface.
Step18: Allow to cool slightly.
Step19: Cut into diamond-shaped pieces.

Notes

  • Sprinkle freshly grated dry coconut, toasted white sesame seeds, and finely chopped coriander leaves evenly over the hot flattened mixture.
  • Gently press the toppings into the warm surface using a flat bowl before cutting diamond-shaped pieces.
