Healthy Nachani Upma


​Ragi upma combines steaming and simple tempering to convert finger millet flour into a fluffy, non-sticky breakfast. Mixing curd with ragi flour before steaming softens the grain completely and eliminates raw taste. Adding colorful vegetables, soaked lentils, and peanuts creates a balanced one-pot meal loaded with protein, fiber, and essential minerals.

Ingredients

  • 1 cup Ragi flour
  • Salt to taste
  • 1/4 cup Curd
  • 1/4 cup Water
  • 2 tbsp Chopped carrot
  • 2 tbsp Chopped french beans
  • 2 tbsp Sweet corn
  • 1 tbsp Soaked peanuts
  • 1 tbsp Soaked chana dal
  • 1 tbsp Oil
  • ​1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • 1~2 Green chillies
  • 1/2 tsp Chopped ginger
  • 1/2 cup Finely chopped onion
  • 7~8 Curry leaves
  • ​2 tbsp Chopped coriander leaves

Instructions

Step 1: Mix ragi flour, salt, curd, and water in a bowl to form a crumble.
​Step 2: Spread the mixture evenly on a plate.
​Step 3: Top with chopped carrot, french beans, sweet corn, soaked peanuts, soaked chana dal, and a pinch of salt.
​Step 4: Steam the plate over boiling water for 10 minutes until cooked through.
​Step 5: Heat oil in a pan.
​Step 6: Crackle mustard seeds and cumin seeds.
​Step 7: Add chopped green chillies, chopped ginger, chopped onion, curry leaves, and a pinch of salt.
​Step 8: Sauté until onion turns soft.
​Step 9: Add the steamed ragi and vegetable mixture into the pan.
​Step 10: Mix gently and cover with a lid.
​Step 11: Steam for 5 minutes.
​Step 12: Garnish with chopped coriander leaves and serve hot.

Notes

  • Garnish generously with finely chopped fresh coriander leaves.
  • Pair this hot wholesome upma with a fresh cup of masala tea or hot filter coffee.
