Today’s recipe is upwaa special appe and chutney. Yes, you heard right. We are making upwasache appe!! These turn out nice and crispy and the chutney goes fantastic with it!! This is a delightful and popular snack, especially during Navaratri and other fasting periods. They are a great alternative to heavier fried foods like sabudana vada and provide a light, yet satisfying, meal option for those observing a fast.  Moreover, we are adding veggies to appe to make it healthier and filling.

The appe pan cooks the outside of the dumpling to a beautiful, light golden-brown color, giving it a slightly crisp crust and a soft, spongy, and light interior that almost melts in your mouth. The nutty, slightly spicy, and tangy chutney provides a wonderful contrast to the mild, savory appe. These appe turn golden in the appe pan without needing too much oil. The result is a light yet satisfying snack that keeps you energized through the day of fasting and devotion.

Ingredients

Appe

  • 1/4 cup / 45 gm Sabudana
  • 1 cup / 150 gm Varai
  • 3~4 Green chilies
  • Ginger knob
  • 1/4 tsp Cumin seeds (Optional)
  • 1/3 cup /80 gm Curd
  • 1/3 cup / 100 gm grated Pumpkin (Optional)
  • Salt to taste
  • 1 cup / 100 ml Water
  • 1 tsp Eno fruit salt
  • Ghee as needed

Chutney

  • 1/2 cup /100 ml Curd
  • 1/4 cup / 50 gm roasted Peanut powder
  • 1/2 tsp Red chili powder
  • Salt to taste

Instructions

Appe

Step 1: Blend sabudana into coarse powder in blender and add varai. Bland it well together and add green chilies.

Step 2: Blend it well together into coarse powder and take it out into a bowl.

Step 3: Add cumin seeds, curd, pumpkin, salt and water to make a little thick batter.

Step 4: Cover and rest the batter for 10 minutes.

Step 5: Mix the batter well once and add fruit salt. Mix in quickly.

Step 6: Heat up appe patra on medium heat and add ghee in each mold.

Step 7: Add a spoonful batter in each mold.

Step 8: Cover and roast the appe until lower side gets nice golden color.

Step 9: Open the lid and add ghee on the appe.

Step 10: Flip the appe over and roast well from other side too.

Step 11: When appe are roasted well from both sides, take them out into a dish. Upwasache appe are ready.

Chutney

Step 12: Blend curd, roasted peanut powder, red chili powder and salt well together in mixer and take it out into a dish. Upwasachi chutney is ready.

Notes

  • Adding cumin seeds and pumpkin is optional. You can skip it if you don’t want. You can use grated potato in place of pumpkin.
  • You can use 1/2 tsp baking soda in place of fruit salt.
