Ingredients

Puri

  • 2 medium size boiled, peeled and grated Potatoes
  • 1 cup Rajgira flour
  • Green chili thecha
  • 1/4 tsp Cumin seeds
  • Grated Ginger
  • Salt to taste
  • Oil for frying

Batatyachi Bhaji

  • 1/2 cup grated fresh Coconut
  • 1” Ginger
  • 1/2 cup roasted Peanut powder
  • 2 tbsp Curd
  • Water as needed
  • 2~3 tbsp Ghee
  • 1/4 tsp Cumin seeds
  • 1 small Cinnamon stick
  • 4 Cardamom
  • 4~5 black Peppercorns
  • 2 tbsp Red chili powder
  • Water to adjust the consistency
  • 3 boiled and peeled Potatoes
  • Salt to taste

Instructions

Puri

Step 1: Mix potato, rajgira flour, green chili thecha, cumin seeds, ginger and salt well together and knead dough.

Step 2: Cover and rest the dough for about 10 minutes.

Step 3: Knead the dough well once. 

Step 4: Make small portions for it and make them smooth and even.

Step 5: Take one of them and dip it in dry flour. Roll out puri from it.

Step 6: Heat up oil on medium heat in a pan and drop puri in hot oil.

Step 7: Press it a little so that it puffs up well and fry well until lower side is nicely fried.

Step 8: When lower side is fried well, flip the puri over and fry well from other side too.

Step 9: When the puri is fried well from both sides, take it out, drain excess oil and transfer it on a wire rack. Upwas puri is ready.

Batatyachi Bhaji

Step 10: Blend coconut, ginger, roasted peanut powder and curd well together into paste and add water.

Step 11: Blend it well together into thin past and vatan is ready.

Step 12: Heat up ghee in a pan and add cumin seeds.

Step 13: When cumin seeds splutter, add cinnamon, cardamom and black peppercorns and fry together for few seconds.

Step 14: Add red chili powder and mix well.

Step 15: Add the vatan and water and mix well.

Step 16: Add salt and simmer the mixture for about 7-8 minutes.

Step 17: Crush potatoes into medium size chunks and add them into the simmering rassa.

Step 18: Mix well and simmer the bhaji for about 5 minutes.

Step 19: Turn the gas off and batatyachi rassa bhaji is ready.

Notes

  • Avoid use of water while kneading and add that much rajgira flour as needed to knead soft dough.
  • You can make around 12 puris from the ingredients used.
  • Adding whole spices is optional. You can skip it if you don’t want.
