Kolhapur special Mutton Thali

Today we are making Kolhapur special mutton thali. This thali contains mutton sukka, tambda rassa, pandhara rassa and bhakri. I have learnt this recipe when I was in Kolhapur. I saw the chef cooking this recipe. So this is an authentic recipe. This thali looks just tempting and tastes super delicious. It is a yummy treat for non veg lovers. I will be giving tips and tricks during the video. You can try this recipe at home and drop a comment for me.

The method making mutton changes from house to house. Today I am sharing with you the way in which a Kolhapuri chef made. The base for tambda and pandhara rassa is mutton stock. We will cook the mutton in cooker so that it will get cooked nicely and quickly. This is much easier recipe. The thali looks tempting and tastes delicious.

I have seen a Kolhapuri chef making this recipe. So I can say that this is an authentic recipe. Though I don’t have non veg, my hubby liked it very much. Tambda and pandhara rassa is specialty of Kolhapur. So far we have seen lot many non veg, specially mutton recipes. This is yet another easy and delicious addition to the list.

Ingredients

For Stock

  • 750 gm Mutton
  • Water as needed
  • Salt to taste

Pandhara Rassa

  • 3 tsp Melon seeds
  • 2 tsp white Sesame seeds
  • 2 tbsp grated dry Coconut
  • Water as needed
  • 2 tbsp Oil
  • 2 Bay leaves
  • 1 Cinnamon stick
  • 1 Star anise
  • 2~3 Cloves
  • 5~6 Black pepper corns
  • 2 green Cardamom
  • 1 tsp Ginger-Garlic paste
  • 2~3 Green chilies
  • Mutton stock as needed
  • Water to adjust the consistency
  • Salt to taste

Tambda Rassa

  • 1 tbsp grated dry Coconut
  • 1 tsp white Sesame seeds
  • 2 tbsp Oil
  • 2 medium size sliced Onions
  • 1” chopped Ginger
  • 3~4 Garlic cloves
  • 1 tbsp roasted Chana dal
  • 1 tbsp grated fresh Coconut
  • Coriander leaves
  • 2 tbsp Oil
  • 1 tsp Kanda lasun masala
  • 1 tsp Red chili powder
  • Mutton stock
  • Salt to taste

Mutton Sukka

  • 3 tbsp Oil
  • 2 finely chopped Onions
  • 1 tsp Kanda lasun masala
  • 1 tsp Garam masala
  • 1 tsp Red chili powder
  • Salt to taste
  • Finely chopped Coriander leaves

Kolhapuri non veg thali

Instructions

Stock

Step 1: In cooker add mutton, water, salt and close the lid.

Step 2: Cook on high heat for 5 minutes.

Step 3: When steam begins to release from the cooker reduce the heat to medium and steam for about 20-25 minutes.

Step 4: Take the cooked mutton pieces out into a bowl and stock is ready.

Pandhara Rassa

Step 5: Blend melon seeds, sesame seeds, dry coconut together into fine powder. Avoid use of water while blending.

Step 6: . Add water and blend again into paste. Vatan for pandhara rassa is ready.

Step 7: Heat up oil in a pan and add bay leaves, cinnamon, star anise, cloves, black peppercorns, green cardamom, ginger-garlic paste and green chilies.

Step 8: Fry it well together for about a minute and turn the heat to low.

Step 9: Add the blended paste and fry together for about 2-3 minutes.

Step 10: Add the mutton stock, water and mix well.

Step 11: Add salt and bring it to boil. Pandhara rassa is ready

Tambda Rassa

Step 12: Heat up a pan on medium heat and add dry coconut and sesame seeds.

Step 13: Roast well together until it gets nice golden color and transfer into a dish.

Step 14: In the same pan heat up oil and add onion, ginger and garlic.

Step 15: Fry it together well until it gets nice golden color.

Step 16: Blend roasted chana dal, roasted coconut mixture together into powder.

Step 17: Add the roasted onion mixture, fresh coconut and blend it well once.

Step 18: Add coriander leaves and blend it together into smooth paste. Avoid use of water while blending.

Step 19: Heat up oil in a pan and add the blended paste.

Step 20: Fry it well and add kanda lasun masala, red chili powder.

Step 21: Mix well and fry for about a minute.

Step 22: Add the mutton stock, salt and mix well.

Step 23: Simmer the rassa well. Tambda rassa is ready.

Mutton Sukka

Step 24: Heat up oil in a pan and add onion.

Step 25: Mix well and fry until onion gest nice golden color.

Step 26: Add the blended paste that we have kept and mix well.

Step 27: Add cooked mutton, kanda lasun msala, garam masala, red chili powder and salt and mix everything well together. 

Step 28: Cover and steam on medium heat for about 5 minutes.

Step 29: Add coriander leaves and mix well. Mutton sukka is ready.

Tambda pandhara rassa

Notes

  • Leave some blended paste that we made for making tanbda rassa for later use in mutton sukka.
  • You can add stock in mutton sukka if you want.
