Satara special kharda mutton is a green masala recipe. As the name suggests the masala used for this recipe contains green chilies and coriander leaves along with other spices that give distinct green color to the recipe. This is dry version. If you want you can add a little water for making gravy. This tastes just awesome and is very easy to make. We already have seen few mutton recipes like sukka mutton, mutton curry, Kolhapuri mutton rassa, mutton kheema are some of them.

The freshly ground masala gives fantastic twist to the recipe. We are not adding more spices to this recipe to retain the taste and flavor of this freshly prepared masala. Generally Satara special recipes are spicy and pungent. Use of green chilies is more in this type of cuisine. We are using garam masala other than green masala in this recipe. This helps to retain the freshness and distinct flavor of the green masala. You also may skip garam masala if you don’t want. The freshness of green chilies and coriander leaves is the USP of this kharda mutton.

Ingredients

  • 2 tsp Oil
  • Finely chopped Onion
  • 1 tsp Ginger-Garlic paste
  • 1/4 tsp Turmeric powder
  • 500 gm Mutton
  • 1/2 cup Water
  • Salt to taste
  • 1/2 cup shredded fresh Coconut
  • 8~9 Green chilies
  • 10~12 Garlic cloves
  • 1 tsp white Sesame seeds
  • 1” finely chopped Ginger
  • Coriander leaves
  • 2 tsp Oil
  • 1/2 tsp Garam masala (Optional)
  • Salt to taste

Instructions

Step 1.Heat up oil in a cooker and add onionAdd onion.

Step 2. Fry until onion turns nice golden.

Step 3. When onion turns nice golden add ginger-garlic paste, turmeric powder and fry for about a minute

Step 4.Add mutton and fry it well with masala.

Step 5. When mutton gets nice coating of masala add a little water and mix well.

Add water & mix well.

Step 6.  Add salt and mix well.

Step 7.Close the lid and cook on medium heat until 7-8 whistles.

Step 8. For making vatan take fresh coconut, green chilies, garlic, white sesame seeds, ginger, coriander leaves in a blender jar

Step 9. Blend everything together into smooth paste. You can add water if needed.

Step 10. Green masala or vatan is ready.

Step 11. Heat up oil in a pan and add vatan in it.

Step 12. Fry it for about 6-7 minutes.

Step 13. When the masala dries up add garam masala and mix well.

Step 14.Add the mutton stock first and cook until the masala begins to release oil.

Step 15.Add salt and mix well.

Step 16.Add cooked mutton and mix well.

Step 17.Cook everything well together for another 7-8 minutes. No need to cover it with lid.

Notes

  1. Adding garam masala is purely optional. You can skip it if you don't want. 
  2. You can add more water while cooking mutton for making mutton stock if you want.
