Ingredients

  • 2 cups /300 gm Wheat flour
  • 1/2 cup / 75 gm Rice flour
  • 2 tbsp Red chili powder
  • 1 tsp Ajwain / Carom seeds
  • 1 tsp white Sesame seeds
  • 1 tbsp Coriander powder
  • Salt to taste
  • 1 1/4 cup / 100 ml warm Water
  • Oil for frying

Instructions

Step 1: Mix wheat flour and rice flour well together.

Step 2: Heat up water in a cooker and when the water begins to boil place a stand at the base and the pot containing the flour on it.

Step 3: Cover it with a lid and close the cooker.

Step 4: Remove the whistle and steam the flour on medium heat for 20 minutes.

Step 5: Turn the gas off and rest it for 10 minutes.

Step 6: Take the pot out loosen the flour. Break the lumps if any.

Step 7: Sieve the flour once and add red chili powder, ajwain, white sesame seeds, coriander powder and salt.

Step 8: Mix everything well together and add a little warm water at a time to knead stiff dough.

Step 9: Take small portion for the dough and make a smooth and even log from it.

Step 10: Fill the log into the chakli mold and roll out chakli from it. Seal both the ends well so that it won’t open while frying.

Step 11: Heat up oil on high heat and when the oil is hot enough, reduce the heat to low.

Step 12: Drop chakli into hot oil and fry well from both sides.

Step 13: When one side is fried well, flip the chakli over and fry well from other side too.

Step 14: When the chakli is fried well from both sides, take it out, drain excess oil and transfer it on a wire rack. Gavhachya pithachi chakli is ready.

Notes

  • When the chakli cools down completely, store it either in zip lock bag or in an airtight container.
  • They have shelf life of about a month.
