Ingredients

  • 500 gm Awle / Indian Gooseberry
  • 2 tbsp Salt
  • 1/2 tsp Fenugreek seeds
  • 1 tbsp Fennel seeds
  • 1 tbsp Coriander seeds
  • 1 tbsp Mustard seeds
  • 1 tbsp Cumin seeds
  • 7~8 finely chopped Green chilies (Optional)
  • 1/4 tsp Turmeric powder
  • 1 Lemon juice
  • 3/4 cup Oil
  • 1/2 tsp Hing
  • 3 tbsp Red chili powder

Instructions

Step 1: Wash awle really good and dry them well. Grate the awle and transfer it into a bowl.

Step 2: Dry roast salt well and take it out into a bowl. Let it cool down completely.

Step 3: Heat up a pan on low to medium heat and add mustard seeds, coriander seeds, cumin seeds, fennel seeds.

Step 4: Roast it well together until nice aroma begins to release from it.

Step 5: Turn the gas off and add fenugreek seeds. Mix well and let the mixture cool down completely.

Step 6: Transfer the roasted mixture into a blender jar and blend it into powder. Masala is ready.

Step 7: Add green chilies, turmeric powder, roasted salt and lemon juice into the grated awla and mix everything well together.

Step 8: Heat up oil in a pan and when the oil is hot enough, turn the gas off.

Step 9: Add hing, the blended masala and red chili powder and mix well. Let the masala cool down completely.

Step 10: When the oil cools down completely, add it into the awla mixture and mix everything well together. Keep a little oil to add later in the jar.

Step 11: Heat up hing in a tadka pan.

Step 12: When smoke begins to rise from the hing, hold the jar upside down on it and let all the smoke enter the jar. This way the jar gets sterilized.

Step 13: Transfer the lonche into the jar and add the leftover oil on it. Awla mirchiche lonche is ready.

Step 14: Let it sit for 2-3 days to mature. You can have it immediately too.

Notes

  • You can slice awle or chop them if you want.
  • Make sure the color of the salt doesn’t change but moisture is removed from it while roasting.
  • Adding green chilies is optional. You can skip it if you don't want.
  • You can use vinegar in place of lemon juice.
  • You can dry the jar under hot sun to sterilize.
  • The pickle has shelf life of about 2-3 years.
