Ingredients

  • ​1/4 cup Onion
  • 1/4 cup Coriander
  • ​1 tsp Red Chili Powder
  • ​Salt to taste
  • ​1 cup Rice Flour
  • ​2 cup Water
  • ​1/4 cup Aamsul
  • ​1/4 cup Jaggery
  • ​1/2 tsp Black Salt
  • ​1/2 tsp Red Chili Powder
  • ​1/2 tsp Cumin Powder
  • ​1/2 tsp Chaat Masala

Instructions

Step 1: Take finely chopped onion, fresh coriander, red chili powder, and salt in a mixing bowl.
Step 2: Mix all ingredients thoroughly using a spoon.
Step 3: Add rice flour to the onion mixture.
Step 4: Pour water gradually into the flour mixture.
Step 5: Whisk continuously to form a smooth runny batter without lumps.
Step 6: Rest the batter for 10 minutes.
Step 7: Place soaked aamsul with its water into a blender jar.
Step 8: Add jaggery, black salt, red chili powder, roasted cumin powder, and chaat masala into the jar.
Step 9: Blend everything until a smooth chutney forms.
Step 10: Heat a pan on medium flame and apply a light layer of oil.
Step 11: Stir the rested batter well before making each crepe.
Step 12: Pour batter onto the hot pan starting from the outer edges toward the center.
Step 13: Cook until the edges crisp up and release automatically from the pan.
Step 14: Flip over carefully and cook the other side until crispy.
Step 15: Serve hot directly with the prepared sweet tangy chutney.

Notes

  • Sprinkle finely chopped fresh coriander leaves over hot crepes right before serving.
  • You can pack these healthy kairolis for tiffin, travels or picnics.
