Ingredients

  • 2 cup Rice flour ​
  • 1/2 cup Gram flour (Besan)
  • ​2 medium peeled and chopped Boiled potatoes
  • ​2 tbsp White sesame seeds
  • ​2 tbsp Coriander powder
  • ​2 tbsp Red chili powder ​
  • 11/2 tbsp Salt
  • ​1/4 tsp Asafoetida (Hing) ​
  • 1/2 tsp Carom seeds (Ova) ​
  • 1/2 tsp Turmeric powder ​
  • 3/4 cup Water ​
  • 2 tsp Oil (for blending with potatoes)
  • ​Oil for deep frying

Instructions

Step1: Take rice flour in a large mixing bowl.

Step2: Sift gram flour directly into the rice flour to remove any lumps.

Step3: Add carom seeds, white sesame seeds, coriander powder, red chili powder, salt, turmeric powder, and asafoetida into the flour mixture.

Step4: Mix all the dry ingredients together thoroughly.

Step5: Place the boiled potato pieces into a mixer jar.

Step6: Pour a portion of water into the mixer jar and blend.

Step7: Add the remaining water in batches along with oil into the mixer jar.

Step8: Blend everything into a completely smooth potato puree.

Step9: Pour the potato puree into the dry flour mixture without adding any extra water.

Step10: Combine and knead everything into a firm and tight dough.

Step11: Take a small portion of the dough and shape it to fit inside the chakli mold fitted with a star plate.

Step12: Fill the dough into the mold and close the lid tight.

Step13: Heat oil in a pan over medium heat and then lower the flame.

Step14: Press the mold directly over the hot oil to release the dough in a continuous random circular motion.

Step15: Fry the chakli on a low flame to ensure it gets cooked evenly inside out.

Step16: Let the first side fry for about three minutes before flipping it over.

Step17: Fry until the bubbles in the oil settle down and reduce.

Step18: Remove the crispy fried chakli using kitchen tongs to drain excess oil.

Step19: Place the fried chakli on a wire rack to let the hot steam escape completely.

Step20: Repeat the process for the remaining dough and break the cooled chakli into small pieces before serving.

Notes

  • Let the snacks cool completely on a wire rack before moving them to an airtight container to keep them crispy.

  • You can crush the big coils into smaller bite-sized pieces for young kids to enjoy easily.
