Ingredients

Dhokla Premix

  • 1 kg Besan
  • 1/2 cup / 60 gm Sugar
  • 1/4 cup / 40 gm Citric acid
  • 2 tbsp Baking soda
  • 1 tbsp Eno fruit salt
  • 1 tsp Turmeric powder
  • 2 tbsp Salt
  • 1/2 cup / 75 gm fine Rava

Dhokla

  • 2 cups Dhokla premix
  • 1 tbsp Oil
  • 1/3 cup / 100 ml Water
  • 1/4 cup / 40 ml Water
  • 1 tbsp Sugar
  • 1 tbsp Oil
  • 1/2 tsp Mustard seeds
  • Pinch of Hing
  • White Sesame seeds
  • 3 slit Green chilies

Instructions

Dhokla Premix

Step 1: Sieve besan well once and keep it aside.

Step 2: Blend sugar, citric acid, baking soda and Eno fruit salt well together into fine powder in mixer.

Step 3: Add this blended mixture into besan and add turmeric powder, salt and rava.

Step 4: Mix everything well together and sieve it well once. Dhokla premix is ready.

Dhokla

Step 5: Mix dhokla premix, oil and water well together to make batter. No lumps of premix should be formed.

Step 6: Before making the batter heat up water in a steamer and bring it to boil.

Step 7: Place a stand at the base and an empty pot on it. Place a weight in the pot.

Step 8: Place a dish on the pot and pour out the batter into the dish.

Step 9: Close the lid and steam the dhokla on high for about 10-12 minutes.

Step 10: Turn the gas off and take the dhokla out. Let it cool down completely.

Step 11: Mix water and sugar well and let sugar dissolve completely.

Step 12: When dhokla cools down, loosen the edges and cut it into pieces.

Step 13: Spread the sugar water on the dhokla.

Step 14: For tadka, heat up oil in a tadka pan and add mustard seeds.

Step 15: When mustard seeds begin to pop up, add hing, sesame seeds and green chilies and cover the pan immediately with a lid.

Step 16: After about 5 minutes, remove the lid and spread the tadka on the dhokla.

Step 17: Take the pieces out and dhokla is ready.

Notes

  • Make sure to sieve the besan. Don't skip it.
  • Store the premix in an airtight container. It has shelf life of about 3 months.
