The spicy masala filling is typically a savory, tangy mixture sautéed on a large flat griddle (tawa). The base usually consists of finely chopped onions, tomatoes, and capsicum (bell pepper), cooked down with a generous amount of butter and a blend of Indian spices, most prominently Pav Bhaji Masala. On the tawa, butter coats the split pav buns, which then toast until they soak up the flavorful masala mixture. The hot, spicy vegetable gravy then fills and tops the buns. Garnish Masala Pav immediately with a sprinkle of fresh coriander leaves (cilantro) and a squeeze of fresh lemon or lime juice for a burst of tanginess.

Ingredients

  • 2 tbsp Oil
  • 4 finely chopped Onions
  • 2 finely chopped Tomatoes
  • 1 tbsp Ginger-Garlic paste
  • 2 finely chopped Capsicum
  • 1 1/2 tbsp Pav bhaji masala
  • 1 tbsp Red chili powder
  • Salt to taste
  • Water as needed
  • 1 tbsp Butter
  • Finely chopped Coriander leaves
  • 2 Ladi pav
  • Butter
  • Red chili powder
  • Pav bhaji masala

Instructions

Step 1: Heat up oil in a pan and add onion.

Step 2: Mix well and fry until onion gets nice golden color.

Step 3: Add tomato and ginger-garlic paste and fry it well together for about 4-5 minutes.

Step 4: When onion and tomato are cooked well together, add capsicum and fry it well together until capsicum is cooked well.

Step 5: Add pav bhaji masala, red chili powder and salt and fry it for about a minute.

Step 6: Add water and mix well.

Step 7: Add butter and coriander leaves and mix well. Masala for masala pav is ready.

Step 8: Heat up a skillet and spread butter.

Step 9: Make a slit to ladi pav but do not cut it across.

Step 10: Roast the inner side of the pav just like we roast for pav bhaji.

Step 11: Spread butter on the outer side of the pav and flip the pav over.

Step 12: Move the pav along the edge of the skillet and add a little butter on the skillet.

Step 13: Add red chili powder, pav bhaji masala and coriander leaves and mix well. Roll the pav in this masala from both sides.

Step 14: Open the pav and add the masala that we made and close the pav.

Step 15: Sprinkle red chili powder and coriander leaves on the pav and turn the gas off. Masala pav is ready.

Notes

  • Serve it with a finely chopped onion and a slice of lemon.
