Ingredients

  • 1 cup Surti kolam Rice
  • 1/4 cup Wheat
  • 2 tbsp Urad dal
  • 2 tbsp Chana dal
  • 1/2 tsp Fenugreek seeds
  • Water as needed
  • 1 tsp Sunth / dry Ginger powder
  • Salt to taste
  • 1 tsp Cardamom powder
  • 1/2 tsp Turmeric powder
  • 3~4 tsp grated dry Coconut
  • 1 tbsp Curd
  • 1 tsp Fennel seeds
  • Gudh / jaggery to taste
  • A piece of Charcoal
  • Ghee

Traditional recipe vafoli

Instructions

Step 1: Blend rice, wheat, urad dal, chana dal and fenugreek seeds into coarse powder in mixer. The powder should have texture like rava.

Step 2: Transfer the powder into a bowl and add water. 

Step 3: Mix well and make thick batter like dosa batter. Make sure that the consistency od batter should be a little thin before soaking as the pulses will soak the water.

Step 4: Soak it overnight so that it will ferment nicely like idli batter.

Step 5: Next morning add dry ginger powder, salt, cardamom powder, turmeric powder, dry coconut, curd, fennel seeds and jaggery and mix everything well together.

Step 6: For giving smoky flavor, heat up charcoal really good and transfer it into a katori.

Step 7: Place the katori into the batter and add ghee.

Step 8: Cover it and rest for about 5 minutes.

Step 9: Remove the lid and take the katori out.

Step 10: Grease a dish well with ghee and pour the batter in it.

Step 11: Spread the batter evenly and garnish with dry coconut.

Step 12: Heat up water in a steamer and when it begins to boil, place the dish into it.

Step 13: Steam the vafoli on medium heat for about 10 minutes.

Step 14: Insert a knife into the vafoli. If it comes out clean, it means the vafoli is steamed well.

Step 15: Take the dish out and take the vafoli out with the help of knife.

Step 16: Vafoli is ready. Cut it into pieces.

Notes

  • You can use dry nuts for garnishing the vafoli if you want.
  • You can have it as it is or with gulavani.
  • You can keep the dry powder ready and make vafoli whenever you want.
