Ingredients

Koshimbir

  • 1 shredded Cucumber
  • 1/3 cup Curd
  • Finely chopped Green chili
  • 1/2 cup roasted Peanut powder
  • Sugar to taste
  • Salt to taste

Vade

  • 4 boiled, peeled and grated Potatoes
  • 1/2 cup grated Pumpkin
  • 1/2 tsp Cumin seeds
  • 1 tbsp Ginger-Green chili thecha
  • Salt to taste
  • 4 tbsp Varai flour
  • 1 tbsp Varai flour
  • Oil for frying

Instructions

Koshimbir

Step 1: Mix cucumber, curd, green chili, roasted peanut powder, sugar and salt well together and koshimbir is ready.

Vade

Step 2: Mix potatoes, pumpkin, cumin seeds, ginger-green chili thecha, salt and varai flour well together in a bowl. Use just enough varai flour to bind the mixture.

Step 3: Do not knead it like dough. Just mix carefully so that it will come together like dough.

Step 4: Make out small portion from the dough and make it smooth and even. You can decide the size and shape of the vade.

Step 5: Sprinkle varai flour on these vade and coat them well with it.

Step 6: Heat up oil on high heat and drop vade into it.

Step 7: Fry vade on high heat until they get nice golden color from all sides.

Step 8: When vade are fried well from all sides, take them out, drain excess oil and transfer them into a dish. Mini vade are ready.

Notes

  • You can use sabudana flour or upwas thalipeeth bhajanior arrowroot powder in place of varai pith. You can skip the pumpkin if you don’t want or replace it with finely chopped rajgira bhaji.
  • You can shallow fry these vade is appe patra. Or you can make small aloo tikkis and shallow fry them or roll thalipeeth and roast them well.
  • You can make 21 vade from the ingredients used.
