This is a popular Indian sweet that is often made on festive days like Diwali and celebrations. These are soft, melt in mouth ladoos made from besan, sugar syrup and nuts. Small round balls of besan are fried and then soaked in sugar syrup. Nuts and flavors are added to it and then rolled into round ladoos. If you don’t have zara to make boondi, then don’t worry. Here I am with a special trick to make boondies without zara!!

Ingredients

  • 1 cup Besan
  • 1/2 cup + 1 tbsp Water
  • 1 tbsp Water
  • 1/4 tsp Saffron food color
  • Oil for frying
  • 3/4 cup Sugar
  • 1/4 cup Water
  • Few Saffron strands
  • 1 tsp Ghee
  • 2 tsp Magaj / Pumpkin seeds
  • Keshari Milk masala
  • Silver work
  • Sliced Pistachios

Instructions

Step 1: Sieve besan into a bowl and add water.

Step 2: Beat the mixture really good.

Step 3: Add water and beat it well.

Step 4: Again add water and beat the mixture well.

Step 5: If you pour the batter from a spoon the it should fall drop by drop and not continuously. We need such consistency of the batter.

Step 6: Add food color and mix well.

Step 7: Cover and rest the batter for about 10 minutes.

Step 8: Beat the batter really good. Pour it into a plastic bag and seal the bag.

Step 9: Heat up oil on high heat in a pan for about 3-4 minutes and then turn the heat to low to medium.

Step 10: Make as small hole as possible to the plastic bag and drop boondies into hot oil.

Step 11: Fry the boondi well from all sides.

Step 12: Take the boondi out, drain excess oil and transfer it into a dish. Boondi for motichor ladoo is ready.

Step 13: For making sugar syrup heat up a pan on medium heat and add sugar and water.

Step 14: Mix well and let sugar melt.

Step 15: Add saffron strands and mix well.

Step 16: After cooking the syrup for about 7-8 minutes on medium heat turn off the gas and check the consistency.

Step 17: Take few drops of syrup in a dish and check. We want a little thicker syrup that single thread consistency syrup. Syrup is ready.

Step 18: Add ghee and mix well.

Step 19: Add hot fried boondi in hot syrup and mix well.

Step 20: Cook for about 3-4 minutes and turn off the gas.

Step 21: Spread the boondi well and cover it with lid.

Step 22: Rest the mixture for about 30-45 minutes. Stir well at the regular intervals.

Step 23: Add pumpkin seeds, Everest keshari milk masala and mix everything well together.

Step 24: Roll ladoos from the mixture and garnish with silver work and pistachios slices. Keshar motichoor ladoos are ready.

 

Notes

  • You can make around 12 ladoos from the proportion used.
  • You can store these ladoos in an airtight container. They have shelf life of about 3-4 days.
