Ingredients

  • 2 cups Besan
  • About 1 1/4 cup Water
  • Oil for frying
  • 2 cups Sugar
  • 1 cup Water
  • 1 tbsp Raisins
  • 1 tbsp chopped Cashew nuts
  • 1 tbsp sliced Almonds
  • 1/4 tsp Cardamom powder

Instructions

  • In a bowl take besan.
  • Add a little water at a time and mix it well.
  • Do not add all the water at a time or lumps of besan will be formed.
  • Try to use beater for mixing that will help to break the lumps.
  • The consistency of batter should be like pakoda batter, neither too thick nor too thin.
  • Mix the batter well continuously with the beater for about 4-5 minutes.
  • The batter should be nice, smooth and light.
  • Rest the batter for about 10-15 minutes.
  • In a pan take sugar and add water in it.
  • Turn on the gas on medium heat and let the sugar dissolve completely.
  • Cook the syrup for 5 minutes more on medium heat after sugar has melted completely.
  • The syrup should have 2 thread consistency.
  • It should be nice, thick and not free flowing.
  • Turn off the gas and sugar syrup is already.
  • Heat up oil on medium heat.
  • Stir the batter well and spread it in the bundi making zara that is held on the pan.
  • Tap the zara to make nice round bundi.
  • If you don’t have bundi making zara then you can use regular zara that is used for frying or a grater.
  • Make sure to use small shrade grater.
  • After every use of regular zara or grater wipe the lower side to remove the batter stuck there.
  • Stir the batter well before making each batch of bundi.
  • Fry bundi on medium heat.
  • Take the fried bundi out into a strainer to drain excess oil if any.
  • Boil the sugar syrup once more and add fried bundi, raisins, cashew nuts, almonds, cardamom powder.
  • Mix everything well together and let the mixture rest for an hour.
  • After an hour roll the ladoos.
  • Take the mixture in hand and roll ladoos pressing the bundi together.
  • Bundiche ladoo are already.
