Ingredients

Chutney

  • 1/2 cup raw Peanuts
  • 1 chopped Green chili
  • 1~2 pieces of Ginger
  • Salt to taste
  • Water as needed

Upma Fry

  • 1 tbsp Oil
  • 1 finely chopped Onion
  • 1 tsp Sunday masala
  • 1 tsp Red chili powder
  • Salt to taste
  • Upma
  • Finely chopped Coriander leaves
  • Water as needed
  • Oil as needed

Instructions

Chutney

Step 1: Soak peanuts in enough water and peel them.

Step 2: Transfer the soaked peanuts into a blender jar and add green chili, ginger and salt.

Step 3: Blend it into paste without use of water first.

Step 4: Add water and blend it again. Chutney is ready.

Upma Fry

Step 5: Heat up oil in a pan and add onion.

Step 6: Fry well until onion gets light golden color and add Sunday masala, red chili powder and salt and mix well. Basic onion masala is ready

Step 7: Add upma and mix well. Add coriander leaves and mix well. Basic upma for upma fry is ready.

Step 8: Move the upma along the edge of the pan.

Step 9: Take small portion of upma at the center and add water. Mix well.

Step 10: Add oil in the pan and spread this little upma as thin as possible on that oil.

Step 11: Spread it well with a spoon and cook until it turns crispy.

Step 12: Take that layer off like dosa and fold it.

Step 13: Transfer it into a dish and upma fry is ready.

Notes

  • You can skip peeling the peanuts if you want.
  • You can use kala masala or kanda-lasun masala in place of Sunday masala.
  • Serve the upma, chutney and the dosa together.
