This is a real quick recipe as we are making it in cooker. This is 1 -1/2 kg masala pulav. I am sharing perfect measurements. If you want to take orders, then this is very useful for you. The rice grains are nicely cooked still are separate. The pulao doesn’t turn out sticky. This can be a perfect main course or side dish recipe. I think you must try it.

Ingredients

  • 3 cups / 500 gm whole Basmati Rice
  • 2 tbsp Oil
  • 1 tsp Cumin seeds
  • 2 Bay leaves
  • 3 green Cardamom
  • 3 black Cardamom
  • 7~8 Black pepper-Cloves
  • 1 Cinnamon stick
  • 1 1/2 cup / 250 gm finely chopped Onion
  • 1 finely chopped Tomato
  • 2 slit Green chilies
  • 1 tsp Ginger-Garlic paste
  • 1 tsp Garam masala
  • 1 tsp Coriander powder
  • 1/2 tsp Turmeric powder
  • 2 tsp Red chili powder
  • 1/4 cup Curd
  • 1/2 cup Green peas
  • 1/2 cup chopped French beans
  • 1/2 cup chopped Carrot
  • 2 medium size peeled & chopped Potatoes
  • Cauliflower florets
  • Few Cashew nuts
  • Salt to taste
  • 1 1/2 cup Water
  • 2 tsp Ghee (Optional)

Instructions

Step 1: Wash rice really good 3-4 times with water and soak it in enough water for 30 minutes.

Step 2: Drain all the water from soaked rice and keep it aside.

Step 3: Heat up oil in a cooker and add cumin seeds.

Step 4: When cumin seeds splutter, add bay leaves, green cardamom, black cardamom, cinnamon and onion and fry well until onion gets nice golden color.

Step 5: When onion is almost fried add tomato, green chilies, ginger-garlic paste and fry everything well together for about 3-4 minutes.

Step 6: Add garam masala, coriander powder, turmeric powder, red chili powder and fry well.

Step 7: Add curd and mix well.

Step 8: Add green peas, French beans, carrot, potato, cauliflower florets and cashew nuts and mix everything well together.

Step 9: Add rice, salt and mix well.

Step 10: Add ghee and close the lid.

Step 11: Steam pulav on medium heat for 15 minutes.

Step 12: Open the lid and mix it well once with fork. Masala pulav is ready.

Notes

  • Adding ghee is optional. You can skip it if you don’t want.
  • You also can cook the pulav on medium heat until 1 whistle.
  • The capacity of the cooker is 4 1/2 liters.
  • If you are serving only rice then pulav made from 500 gm rice is sufficient for 5 people or 5-7 people which include kids too. If you are serving this as side dish along with some main course then it is sufficient for 8-10 people.
