Ingredients

  • 1 1/2 cup sliced dry Coconut
  • 1/2 cup Garlic cloves (About 25-30 cloves)
  • 2 tbsp Red chili powder
  • 1/2 tbsp Cumin seeds
  • Salt to taste
  • 1 tbsp Oil

Instructions

  • Heat up oil in a pan.
  • Add garlic and fry for about a minute.
  • Add sliced coconut, cumin seeds and mix well.
  • Fry for about 2-3 minutes.
  • Do not fry longer. No need to change the color of coconut.
  • Heating up coconut a little helps to release oil from it. Turn off the gas.
  • Transfer everything into a blender jar and blend it a little.
  • Add red chili powder, salt and blend again.
  • Do not blend continuously. Give pulse and turn off the mixer.
  • After blending for about a minute or so bring everything to center with the help of butter knife or spoon.
  • Close the lid and blend again.
  • Do not blend it into fine powder. The chutney should have a little coarse texture.
  • If coconut is too dry or you are living is dry or too cols place then you can add a little oil about a tsp oil while blending.
  • You can store the chutney in airtight container for about 2-3 months.
  • You can have this chutney with jawar, bajra bhakari or paratha.
