Ingredients

  • 1 Tender coconut water
  • 1 Tender coconut cream
  • 8~10 Dried Kokum
  • 4~5 Garlic cloves
  • 1/2 tsp Cumin seeds
  • 1~2 Green chilies
  • Salt to taste
  • 1 tbsp finely chopped Coriander leaves
  • 1 cup Water

Instructions

​Step 1: Soak the dried Kokum in water for an hour to extract its deep juice.
Step 2: Add green chili, cumin seeds, garlic, and tender coconut cream into a blender jar.
Step 3: Blend the ingredients smoothly without adding water first.
Step 4: Pour in the tender coconut water gradually and blend again until uniform.
Step 5: Strain the blended mixture into a large bowl to remove coarse bits.
Step 6: Strain and add the soaked Kokum juice into the coconut milk.
Step 7: Add salt to taste and stir well until the color becomes uniformly pink.
Step 8: Mix in finely chopped coriander leaves and chill before serving.

Notes

  • You can garnish with freshly chopped coriander leaves right before serving to add a bright flavor and look.
  • ​If you run out of coconut water, you can blend the fresh cream with regular chilled water instead.
