Ingredients

  • 1/2 cup Water
  • 1/2 cup Milk
  • 1 tsp Ghee
  • A pinch of Salt
  • 1 cup Rice flour
  • 1 tbsp Ghee
  • 1 tsp Poppy seeds
  • 1 1/2 cup shredded fresh Coconut
  • 1 tbsp finely chopped Cashew nuts
  • 1 tbsp finely chopped Almonds
  • 3/4 cup Gudh / Jaggery
  • 1/2 tsp Cardamom powder
  • 1/4 tsp Nutmeg powder
  • Few Saffron strands

Instructions

Step 1: Heat up a pan on medium heat and add water, milk, ghee and salt.

Step 2: Mix well and bring it to boil.

Step 3: When the mixture begins to boil add rice flour and mix in quickly.

Step 4: Cover and steam the ukad on low heat for just 5 minutes.

Step 5: Turn off the gas and let the ukad be on the gas for another 5 minutes.

Step 6: Transfer the ukad into a dish while still hot.

Step 7: Grease the base of a pot well with ghee or oil and knead the ukad with the help of it.

Step 8: Knead the ukad well with hand until it turns nice and soft.

Step 9: Take a small portion from it and make it smooth and even.

Step 10: Rub dry flour to your fingers and make pari or katori from the ukad. The pari should be thin.

Step 12: Pinch the pari to make kalya and fill in the stuffing.

Step 13: Turn the modak clockwise and bring the kalya together.

Step 14: Close the modak and seal it well.

Step 15: Remove the excess ukad and place the modak in a dish.

Step 16: Dip the base of the modak into water and place them into the steamer. Leave some space between 2 modak.

Step 17: Dip saffron strand in water and place it on each modak.

Step 18: Steam the modak on medium heat for about 8-10 minutes.

Step 19: Remove the lid and check. If modak get nice glaze, it means that modak are steamed well.

Step 20: Take the modak out into a dish and ukadiche modak are ready.

Step 21: For making stuffing heat up a pan on medium heat and add ghee.

Step 22: Add poppy seeds and roast until it begins to puff up.

Step 23: Add fresh coconut and fry for about 3-4 minutes.

Step 24: When coconut is almost roasted, add cashew nuts, almonds and gudh and mix everything well together.

Step 25: Cook the mixture for about 4-5 minutes and turn off the gas.

Step 26: Add cardamom powder nutmeg powder and mix well. Stuffing is ready.

 

Notes

  • Milk helps to make white modak.
  • You also can use homemade butter in place of ghee.
  • You can use only milk or only water in place of milk and water mixture.
  • Keep the leftover ukad and ready modak covered with a wet cloth.
  • You can roll the pari with the help of rolling pin too.
  • You can make 11 modak from the ingredients we used.
