However, today I have something much more exciting and versatile in mind. During the hot summer holidays, especially on weekends, we all get tired of the usual roti-sabzi routine. Consequently, we want something that feels like a treat—like the vibrant snacks you get at local street stalls—but we also want to keep it wholesome, healthy, and filling for our family.

Ingredients

  • 2 tbsp roasted Chana dal (Dalva)
  • 1 small Garlic clove
  • 1 Green chili
  • Handful of fresh coriander
  • Few mint leaves (optional)
  • 1/4 cup raw Mango pieces
  • 1/2 tsp Cumin powder
  • Salt to taste
  • 1 tsp Black salt
  • 1 tsp Chaat masala
  • 4~5 Ice cubes
  • 1/2 tsp roasted cumin powder (for masala)
  • 1/2 tsp black pepper powder (for masala)
  • 1/2 tsp black salt (for masala)
  • 1/2 tsp chaat masala (for masala)
  • Bread slices
  • Finely chopped onion
  • Finely chopped cabbage
  • Chopped green chilies
  • Finely chopped tomato
  • Grated cheese
  • Butter

Instructions

Step 1: Put roasted chana dal, garlic, and green chili in a mixer jar and grind it into a fine powder first.

Step 2: Add coriander, raw mango, cumin powder, salt, black salt, and chaat masala to the same jar.

Step 3: Add ice cubes or cold water and grind it again to make a smooth green chutney.

Step 4: Take a small bowl and mix roasted cumin powder, black pepper powder, black salt, and chaat masala to prepare the secret sandwich masala.

Step 5: Take two bread slices and spread a generous amount of green chutney on one side of each slice.

Step 6: Place finely chopped onion on the chutney-covered bread.

Step 7: Add a layer of finely chopped cabbage over the onion.

Step 8: Sprinkle some chopped green chilies and the prepared secret sandwich masala over the cabbage.

Step 9: Place tomato slices or chopped tomatoes on top.

Step 10: Add plenty of grated cheese over the vegetables.

Step 11: Cover it with the second bread slice (chutney side down).

Notes

  • You can have this sandwich immediately when it comes out of the toaster. The bread stays super crispy, and the cheese remains wonderfully melted.
  • Serve it alongside a small bowl of the remaining raw mango green chutney and classic tomato ketchup for that perfect balance of spicy and sweet.
  • Garnish it with generous handful of fine nylon sev and a extra grating of processed cheese if you wish.
