Ingredients

  • 1 cup Rice flour
  • 1/2 cup Jwari flour
  • 1/4 cup Wheat flour
  • 1/4 cup Besan
  • 1 cup Water
  • 1 tbsp Coriander powder
  • 1 tsp Cumin powder
  • 1/2 tsp Turmeric powder
  • 1/4 tsp Hing
  • Salt to taste
  • 1 tsp Red chili powder
  • 1 tbsp Oil
  • 1 tbsp white Sesame seeds
  • Oil for frying

Instant chakli

Instructions

Step 1: Mix rice flour, jwari flour, wheat flour, besan well together and sieve them into a dish.

Step 2: For making ukad heat up water in a pan and bring it to boil.

Step 3: When water begins to boil, add coriander powder, cumin powder, turmeric powder, hing, salt, red chili powder and oil.

Step 4: Mix well and turn the heat to very low.

Step 5: Add the flour, sesame seeds and mix everything well together. Turn off the gas.

Step 6: Cover and steam the ukad for about 5 minutes.

Step 7: Take the ukad out into a dish and knead it well with the help of a pot.

Step 8: Knead the ukad really good until it becomes smooth and even.

Step 9: Take a small portion and make it smooth and even.

Step 10: Transfer the ukad into chakli mold and roll out chakli from it on a butter paper.

Step 12: Seal both the ends of the chakli really good.

Step 13: Heat up oil in a pan on high heat and when the oil is hot enough turn the heat to low.

Step 14: Drop chakli into hot oil and fry it well from both sides on low heat.

Step 15: After frying chakli for about 2-3 minutes from one side, flip the chakli over and fry well from other side too.

Step 16: When chakli is fried well from both sides, take it out, drain excess oil and transfer into a dish. Mix flour chakli is ready.

Notes

  • You can use food processor to knead the ukad.
  • When chakli cools down completely, you can store it into an airtight container.
