Diwali faral is main part of it in which people make chivda, different ladoo, karanji, chakli, shankarpali, anarase etc. The tricky part in making rava ladoo is making the sugar syrup. As I am sharing tips, it will be easier for you. Besides, I am showing to make 1 kilo ladoos. If you are taking orders, it will help you a lot!! This recipe doesn’t need lot many ingredients. You can make it from very few ingredients those are available in your pantry.

Ingredients

  • 500 gm fine Rava / Suji
  • 1 cup / 200 gm Ghee
  • Finely chopped Dry nuts (Cashew nuts, Almonds) (Optional)
  • 1 1/2 cup / 300 gm Sugar
  • 1/2 cup + 2 tbsp Water
  • 1/2 tsp Cardamom powder
  • Few black Raisins

How to make rava ladoo

 

Instructions

Step 1: Heat up a pan on medium heat and add rava, ghee.

Step 2: Rost it together on medium heat for about 7-8 minutes. Keep on stirring the rava continuously.

Step 3: The color of rava should not change. But at the same time it should not be raw.

Step 4: After roasting rava for few minutes, add dry nuts and roast it well together.

Step 5: When nice aroma begins to release from rava but color hasn’t changed, it means it is roasted well. Turn off the gas.

Step 6: For making sugar syrup, heat up a pan on medium heat and add sugar, water.

Step 7: Mix well and cook together until single thread consistency sugar syrup is ready.

Step 8: When sugar dissolves completely, cook the mixture for another 5 minutes on medium to high heat.

Step 9: Before checking the consistency, turn off the gas and collect few drops of sugar syrup from the edge of the pan into a dish.

Step 10: After taking the drop into the dish, if it doesn’t spread much, then the sugar syrup is ready.

Step 11: Let it cool down a little and check it between 2 fingers.

Step 12: If single thread is formed between your fingers, it means the syrup is ready.

Step 13: Transfer the roasted rava into the sugar syrup when the syrup is still hot.

Step 14: The rava should not be too hot. Cool it down a little before adding into the syrup.

Step 15: Mix everything well together and add cardamom powder.

Step 16: Mix well and cover the mixture. Rest the mixture for about 30 minutes.

Step 17: When the mixture sets well, roll the ladoos from it and garnish with black raisins. Rava ladoos are ready.

Notes

  • Melt the ghee before measuring. Make sure you don’t use thick ghee.
  • Adding dry nuts is optional. You can sip it if you don’t want.
  • You can make around 21 big ladoos or around 30 small ladoos from the proportion we used.
  • You can store these ladoos in a n airtight container when they cool down completely.
  • They have shelf life of about 3-4 weeks.
  • If the mixture remains runny after an hour or two and you can’t roll the ladoos then cook the mixture again for few minutes. You will be able to roll the ladoos.
  • If the mixture is too dry then blend the mixture into the blender. Add a little sugar syrup in it and mix well. You will be able to roll the ladoos.
