Ingredients

  • 1/4 cup / 50 gm Fenugreek seeds
  • 1/4 cup / 50 gm Ghee
  • 1 cup / 100 gm grated dry Coconut
  • 1/2 cup / 100 gm Ghee
  • 1 cup / 100 gm Cashew nuts
  • 1 cup / 100 gm Almonds
  • 1 cup / 100 gm Walnuts
  • 1/2 cup / 50 gm Pumpkin seeds (Optional)
  • 1 tsp Poppy seeds
  • Black Raisins (Optional)
  • 1/2 cup / 100 gm Ghee
  • 1 cup / 130 gm Wheat flour
  • 1 small katori / 50 gm Gondh / Edible gum powder
  • 1 1/2 cup / 300 gm Gudh / Jaggery
  • Pistachios slices

Healthy methiche ladoo

 

Instructions

Step 1: Blend fenugreek seeds into as fine powder as possible and transfer it into the ghee.

Step 2: Beat the mixture really good and rest it overnight.

Step 3: Roast dry coconut on medium heat until it begins to turn golden and transfer it into a dish.

Step 4: Heat up ghee in the same pan and add cashew nuts.

Step 5: Fry until cashew nuts begin to turn light golden, add almonds, walnuts, pumpkin seeds.

Step 6: Fry it well for a minute or two and add poppy seeds.

Step 7: Fry everything well together.

Step 8: When the dry nuts are almost roasted, turn off the gas and add black raisins.

Step 9: Mix well and keep it aside.

Step 10: Heat up ghee in another pan and add wheat flour.

Step 11: Roast the wheat flour really good on medium heat until it gets light reddish color.

Step 12: Turn off the gas and add gondh powder.

Step 13: Mix well until gondh puffs well.

Step 14: Add gudh and mix well until gudh melts.

Step 15: Transfer the roasted dry nuts and roasted coconut into a food processor and blend it into powder.

Step 16: Add the fenugreek powder that was soaked in ghee and the gudh mixture and blend it together.

Step 17: Transfer the mixture into a dish and roll ladoos from it.

Step 18: Garnish with pistachios and methiche ladoo are ready.

Notes

  • Soaking methi powder in ghee over night helps to reduce the bitterness of methi.
  • Adding pumpkin seeds is optional. You can skip it if you don’t want.
  • You can use the dry nuts those are available with you.
  • You can use peanuts in place of dry nuts.
  • You can follow the same process in mixer too. But in that case, you have to do it in 2-3 batches.
  • You can make around 35-40 ladoos from the proportions we used.
  • You can store them in an airtight container for about a month.
