Diwali is said to be king of festivals. It is celebrated with great enthusiasm all over India. Diwali faral is main part of it in which people make chivda, different ladoo, karanji, chakli, shankarpali, anarase etc. It has different names depending on the area like shakkarpara or shakarpara etc. This shankarpali not only turns out crispy but also tastes just awesome. Besides, I am sharing few tips and perfect proportions too!! You can make it ont only sweer but also savory depending on your taste!! Today, we are making sweet version. This recipe doesn’t need lot many ingredients. You can make it from very few ingredients those are readily available in your pantry. I am sure, all will love it.

Ingredients

  • 1 cup Milk
  • 1 cup Sugar
  • 1 cup Ghee
  • 7 cups / 1 kilo Maida
  • Oil for frying

How to make shankarpali

Instructions

Step 1: Heat up a pan on medium heat and add milk and sugar.

Step 2: Heat it up together until sugar is dissolved.

Step 3: When sugar is dissolved and the mixture boils, turn off the gas and add ghee.

Step 4: Mix well and base for shankarpali is ready.

Step 5: Transfer the base into the maida and mix in with the help of ladle.

Step 6: Knead the mixture into dough.

Step 7: Make small portions of the dough. Keep the leftover dough covered with a wet cloth.

Step 8: Take one portion and roll it into a thick chapati. The thickness of the chapati should be around 1 cm.

Step 9: Cut off the edges and roll the chapati little more if you want.

Step 10: Cut shankarpali into size and shape you want and take them out into a dish.

Step 11: Heat up oil on high heat for about 5 minutes and reduce the heat to low.

Step 12: Drop shankarpali into hot oil and fry it well for at least 3-4 minutes.

Step 13: When shankarpali gets nice golden color from all sides, take it out, drain excess oil and transfer it into a dish. Shankarpali is ready.

Step 14: You can store them in an air tight container when they cool down completely. They have shelf life of about 1 month.

Notes

  • Let the milk cool down a little before adding ghee.
  • Melt ghee before measuring. Make sure you don’t use thick ghee.
  • You can add salt if you want.
  • You can use dalda or vanaspati ghee in place of ghee.
  • Rolled out shankarpali should not dry out. Keep it covered with wet cloth.
  • If oil is hot enough and still shankarpali dissolves in oil, then add a little more maida into the dough. Add a little milk and knead the dough again. Roll out shankarpali and fry. It won’t dissolve.
