This is a very easy and simple recipe. If you fast for all 9 days of Navaratra then you need variety in your food. So, this is one such recipe that is different. If you are bored of having the same upwas menu then this is the best option for you. Besides, we are not using Eno or baking soda. Also this recipes doesn’t need lot many ingredients. You can make it from very few ingredients those are readily available in your pantry. I think you must try this recipe once.

Ingredients

Amboli

  • 1 cup Varai / Vrat ke chaval
  • 1/4 cup Sabudana
  • 2 tsp Curd
  • Salt to taste
  • Ghee

Chutney

  • 7~8 dry Red chilies
  • Hot Water
  • 1 tbsp Curd
  • 1/4 cup roasted Peanut powder
  • Salt to taste
  • 1/2 tsp Sugar

Instructions

Amboli

Step 1: Mix varai and sabudana well together and wash it really good 3-4 times with water.

Step 2: Soak it in enough water for at least 4-5 hours.

Step 3: Drain all the water from the soaked mixture and transfer it into a blender jar.

Step 4: Add curd and blend it into as fine batter as possible.

Step 5: Transfer the batter into a bowl.

Step 6: Cover and ferment the batter for at least 7-8 hours or overnight.

Step 7: Add salt and mix well.

Step 8: Heat up a pan on medium heat and spread ghee.

Step 9: Wipe it with a tissue paper.

Step 10: Add a ladleful batter on the pan and spread it a little.

Step 11: When nice bubbles begin to release from the amboli, cover and cook it for about a minute.

Step 12: When lower side is roasted well, take the amboli off on a wire rack. 

Step 13: Upwasachi amboli is ready. Serve it with chutney.

Chutney

Step 14: Soak dry red chilies in hot water for about 30 minutes.

Step 15: Transfer the soaked chilies into a blender jar and add curd, roasted peanut powder, salt and sugar.

Step 16: Blend it well together in mixer and chutney is ready.

Notes

  • If needed you can add water in the batter just before making amboli to adjust the consistency.
  • If you don’t want to ferment the batter or make instant amboli, then add Eno or baking soda into the batter.
  • You can use ground nut oil in place of ghee.

This is a very easy and simple recipe. It looks nice and tastes just awesome. The amboli gets perfect texture and is nice and soft and so is chutney. Serve it with chutney or you can have it as it is.
