Ingredients

  • 1 medium sliced Onion
  • 1/2 cup sliced Cabbage
  • 1/2 cup grated Carrot
  • 1/2 cup grated Cauliflower
  • 1 big cup finely chopped Spinach
  • 2 cups Wheat flour
  • 1/2 cup powdered Poha
  • Finely chopped Coriander leaves
  • 2 tbsp Curd
  • 1 tsp Garam masala
  • 1/2 tsp Ajwain / Carom seeds
  • 1/2 tsp Cumin seeds
  • 2 tbsp white Sesame seeds
  • 1 tbsp Coriander powder
  • 1/2 tsp Turmeric powder
  • Green chili-Garlic paste (7~8 Garlic cloves & 3~4 Green chilies)
  • Salt to taste
  • 1 tsp Red chili powder
  • 2~3 tsp Water
  • 1 tsp Oil
  • Oil as requiredInstant mix veg paratha

Instructions

Step 1: Take onion, cabbage, carrot, cauliflower, spinach, wheat flour, poha powder, coriander leaves, curd, garam masala, ajwain, cumin seeds, sesame seeds, coriander powder, turmeric powder, green chili-garlic paste, salt, red chili powder in a bowl and mix well.

Step 2: Crush the veggies with hand while mixing so that the moisture will be released and you can knead dough using minimum water.

Step 3: Add water and knead a little stiff dough.

Step 4: Add oil and knead again.

Step 5: Take small portion from the dough and make it smooth and even.

Step 7: Sprinkle dry wheat flour and roll paratha from it. The paratha should be a little thick.

Step 8: Heat up a skillet on medium heat and transfer the paratha on it.

Step 9: After frying for about 2 minutes from one side flip the paratha over and roast well from other side too.

Step 10: Spread oil on upper side and flip it over.

Step 11: Spread oil on other side and roast well.

Step 12: When paratha is roasted well from both sides, take it off on a jali or cooling rack. Mix veg paratha or poha paratha is all ready.

Notes

  • You can use veggies of your choice.
  • The paratha may get cracks at the edges as we have used poha. Make edges even while rolling if you find any cracks.
  • You can serve it with some curd or pickle or sauce.
