Puran Poli is an authentic traditional Maharashtrian recipe. It is a sweet Indian flatbread specially made for holi festival. The stuffing of poli is made with chala dal and jiggery. Ingredients

For Dough:

  • 2 cups Wheat flour
  • 1 cup Maida / All purpose flour
  • 1 1/4 cups Water
  • Salt to taste
  • 3 tsp Oil

For Puran:

  • 1 cup Chana dal
  • 1 cup Jaggery / Gudh
  • 1/2 tsp Nutmeg powder

Instructions

For Puran:

  • Take chana dal and wash it really well. Add 2 1/2 cups water and soak it for at least 3 hours.
  • Transfer the dal with water in the cooker and cook on medium heat until 3 whistles.
  • Drain excess water with the help of a strainer.
  • Do not throw away this water. You can use it to make katachi amti. Add a little mashed dal with it if you want.
  • Mash the dal with potato masher really good. No grains of dal should be left behind.
  • Transfer the dal into a microwave-safe bowl and add grated gudh. Mix well.
  • Microwave puran for just 2 minutes. After 2 minutes take the bowl out and mix puran well.
  • Microwave Puran again for 3 more minutes. Take out and mix well again.
  • Microwave it again for 3 minutes. Though it looks a bit thin, it will thicken up as it will cool down.
  • Add nutmeg powder and mix well. Puran is already.
  • You can cook Puran on gas too. Mix mashed dal and jaggery and cook on medium heat.
  • Stir continuously and cook until Puran thickens up.

For Dough:

  • On a plate, take wheat flour. Add maida and salt to taste.
  • You can change the proportion of wheat flour and maida according to your taste. Mix well.
  • Add a little water at a time and make a soft dough of it.
  • Don’t add more water at a time.
  • The dough should be a little thin.
  • Add oil and knead the dough again.
  • Repeat the procedure until the dough doesn’t stick to your hand.
  • Transfer the dough into a bowl, cover, and give it a standing time of at least 1-1 1/2 hours.
  • Take a medium size ball of dough and make pari.
  • You can roll 6” poli from this ball, stuff Puran like paratha, and make Puran Poli too.
  • But Puran poli turns out better if you make pari.
  • Stuff ouran in pari and seal it from all sides.
  • Dip it in dry flour and roll poli.
  • Heat up a pan on medium heat. When the pan is enough hot, transfer the rolled poli to the pan.
  • Roast from one side for just 2 minutes until small bubbles begin to appear.
  • Flip over and spread a little ghee.
  • You can use oil if you like.
  • Flip over again and spread ghee on another side again.
  • Roast from both sides really good.
  • Puran Poli is already. Serve with lots of ghee.
