Dodaka or ridge gourd is not that favourite sabzi. But if you try making dodaka in this way, I am sure it well a hit menu. Bharala dodaka or stuffed ridge gourd is a very easy and simple recipe. It tastes just awesome and doesn’t need lot many ingredients. This is a real quick recipe and can be a good lunch box option. You can try this recipe at home and drop a comment for me. Ingredients

  • 1/2 cup raw Peanuts
  • Shredded dry Coconut
  • 1/2 tsp Cumin seeds
  • 1 tsp white Sesame seeds (Optional)
  • Curry leaves
  • 7~8 Garlic cloves
  • 1 tsp Kala masala
  • 1 tsp Red chili powder
  • Salt to taste
  • 1/2 tsp Sugar
  • Coriander leaves
  • A little Water
  • Dodaka / Ridge gourd
  • 3 tsp Oil
  • Water

Instructions

  • Heat up a pan on medium heat and add peanuts.
  • Roast peanuts until light brown.
  • When peanuts begin to change the color add coconut, cumin seeds, white sesame seeds, curry leaves, garlic and fry for about 3-4 minutes.
  • Adding sesame seeds is optional. You can skip it if you don’t want.
  • When everything is roasted well turn off the gas and let it cool down.
  • Transfer the mixture into a blender jar and add kala masala, red chili powder, salt, sugar, coriander leaves
  • Blend it into powder and masala id ready.
  • Transfer the masala into a dish and add water to give binding and mix well.
  • Cut off the end portions of ridge gourd and peel it.
  • Cut it into 2” pieces and give it a slit at the center like we do for bharala vange.
  • You can give 2 cuts if want like vange.
  • Stuff the masala in each piece of gourd.
  • Heat up oil in a pan. Drop the stuffed pieces into it and cover it to cook.
  • After steaming for about 3-4 minutes remove the lid and flip the pieces over.
  • Cover and steam for maximum 2-3 minutes more.
  • After about 2 minutes remove the lid and mix well once.
  • If you want to make gravy, move the ridge gourd aside and add the remaining masala into the oil.
  • Fry the masala for 2 minutes.
  • When the masala is roasted well mix it with ridge gourd and add water.
  • Mix well and cook for another 2-3 minutes.
  • Bharala dodaka is all ready.
