Ingredients

  • 1/2 cup Chana dal
  • 1~1 1/4 cup Water
  • 1/4 tsp Turmeric powder
  • 1 cup Wheat flour
  • Salt to taste
  • 1 tsp smoking hot Oil
  • Water
  • 1/2 cup Gudh / Jaggery
  • 1/4 tsp Cardamom powder
  • Nut meg powder

Instructions

  • Wash chana dal really good and soak it in enough water for about 5-6 hours.
  • You can soak it overnight too if possible.
  • Transfer the soaked chana dal into cooker and add water.
  • Add turmeric powder and mix well.
  • Close the lid and cook on medium heat until about 3-4 whistles.
  • Take wheat flour into a dish.
  • Add salt, oil and mix well.
  • Add a little water at a time and knead a little thick dough like puri dough.
  • Transfer the dough into a bowl and spread a little oil on it.
  • Cover and rest it for about 30 minutes.
  • Drain the excess water from the cooked dal.
  • You can use this water for making katachi amti.
  • Transfer the cooked dal into a pan and mash it really good with potato masher.
  • Add gudh and mix well.
  • Cook everything well until gudh melts.
  • When gudh melts, continue cooking for another 7-8 minutes.
  • When puran thickens up add cardamom powder, nut meg powder and mix well.
  • Puran is all ready.
  • Heat up water in a steamer.
  • Line up the upper pot of steamer with banana leaf or cotton cloth.
  • Take the dough and knead it once to make smooth and even.
  • Take a small portion of dough and roll it into a puri.
  • You can decide the size and thickness of the puri.
  • Try to roll it a little thin as it becomes a little thick after cooking.
  • Stuff the puran at the center of the puri and fold it from all 4 sides.
  • You can add ghee if you want.
  • Transfer the dind into the upper steamer pot and put the pot on other steamer pot.
  • Cover and steam on medium heat for about 10-15 minutes.
  • After steaming let them be in the steamer for another 10 minutes.
  • Open the lid and take the dind out into a plate.
  • Puranache dind are all ready.
  • You can have these as it is hot with lot of ghee on it.
