Ingredients

  • 1 liter full cream / full fat Milk
  • Few Saffron strands
  • 10~12 Almonds
  • 10~12 Cashew nuts
  • 1 tbsp Melon seeds
  • 1/2 cup Sugar
  • Soaked and chopped Dry nuts (Almonds, Cashew nuts)
  • 1/4 tsp Turmeric powder
  • 6 Cardamom powdered
  • 1 pinch of Nutmeg powder

Instructions

Step 1: Heat up milk on medium heat in a pan and add saffron.

Step 2: Mix well and bring it to boil. Keep on stirring the milk at regular intervals.

Step 3: Soak almonds in hot water for about an hour and soak cashew nuts and melon seeds together in water for about an hour.

Step 4: Drain all the water from soaked seeds and peel the almonds.

Step 5: Transfer the soaked almonds, melon seeds and cashew nuts into a blender jar and blend it into paste. Avoid use of water now.

Step 6: Once the mixture is blended coarse then add water and blend it into fine paste.

Step 7: When milk begins to boil add sugar, dry nuts and mix well.

Step 8: Add the blended paste and turmeric powder and mix well.

Step 9: Simmer the milk on medium heat for about 10 minutes and turn off the gas.

Step 10: Add cardamom powder and nutmeg powder and mix well. Masala dudh is ready. This is enough for 10 people.

Notes

  • You can use 1 1/2 liter milk if you want.
  • You can soak 10-12 raw peanuts in place of melon seeds and peel them before blending.
  • You can use only almonds and peanuts or only peanuts too.
