Ingredients

  • 1/2 kg Basamati rice
  • 1/2 tsp Poppy seeds
  • Salt to taste
  • Water

Instructions

  • Take basamati rice and wash it with water 3-4 times.
  • Add more than double the quantity of rice water in it and soak for 3 days.
  • If you soak rice today at 8 am, then tomorrow at 8 am, drain all the water from rice, wash them well and soak again.
  • Repeat the process on 3rd day too. Soak again in enough water for the whole day.
  • Drain all the water form rice. Take a strainer and place on a pot.
  • Take out the rice into the strainer and let the water get drained for about 30 minutes.
  • Spread a cotton cloth and transfer the rice on it.
  • Spread the rice on the cloth and dry them over night.
  • Next morning, transfer the rice and blend them into fine powder.
  • Sieve the flour through rava strainer twice.
  • The flour should fine. No coarse texture should be left in it.
  • Add poppy seeds and salt to taste.
  • Mix well and add a little water at a time to make water.
  • The batter should be a bit runny.
  • Boil water in a pot and take some cold water in a dish.
  • Take a duradi too and needle.
  • Take a dish and add spoonful mixture on its reverse side.
  • Turn it round and round to spread the papdi batter evenly on it.
  • Make medium size and a little thin papdi.
  • Put the dish on boiling water pot. Cook papdi for about a minute until it dries up a little.
  • Flip over the dish and cook from other side for a minute.
  • Transfer the dish into cool water facing the papdi into water.
  • Take out the dish and loosen the sides with the help of needle.
  • Pick up the papdi carefully and transfer it on duradi.
  • Repeat the procedure for all papdi.
  • Transfer the papdi onto a plastic sheet for drying.
  • You can skip the duradi step and transfer the papdi directly on cotton cloth or plastic sheet for drying.
  • Dry under hot sun for 4-5 hours and flip over.
  • Dry from other side as well.
  • Papdi gets dried in 1-2 days. Papdi is already.
