Ingredients

  • 1 liter full cream Milk
  • 2 ripe Mangoes
  • 1/4 cup Sugar
  • 2 tsp Ghee (Optional)
  • Pistachios slicesDelicious mango milk cake

Instructions

Step 1: Heat up milk on medium heat and bring it to boil.

Step 2: Wash mangoes really good and cut off stem part.

Step 3: Make 4 slits to mango and peel it.

Step 4: Chop mango into pieces and blend it into puree.

Step 5: When milk begins to boil, continue boiling it for another 20-25 minutes on medium heat. The milk should reduce to almost half of original quantity.

Step 6: Add mango puree into the milk and mix in quickly.

Step 7: Continue boiling milk on medium to high heat for about 15 minutes. Stir the milk continuously.

Step 8: Cook the mixture until it thickens up really good and begins to leave the edges of the pan.

Step 9: When the mixture thicken up well add ghee and mix well.

Step 10: Cook for another 2 minutes after adding ghee and turn off the gas.

Step 11: Line up a tray with butter paper at the base and pour out the mixture into it.

Step 12: Spread it evenly and tap the tray really good.

Step 13: Let the milk cake set at room temperature for about 5-6 hours.

Step 14: Loosen the edges with the help of a knife and flip the tray over a dish.

Step 15: Garnish it with pistachios and mango milk cake is all ready. Cut it into pieces.Simple mango milk cake

 

Notes

  • Do not overcook the mixture or the milk cake will be chewy.
  • Adding ghee is optional. You can skip it if you don’t want.
  • Ghee gives natural binding. You can cut the cake easily when it cools down.
  • You can use any pot or cooker tin in place of the tray.
  • You can set the cake overnight too.
