Malvan Special Easy Anda Curry

We are making simple vatan or masala. Malvani masala used in this recipe takes it to next level. Do try this recipe at home.

Anda curry is made in different ways at different places. But this is Malvan special recipe. When I visited Malvan I came to know about this recipe there. It is very easy and simple recipe. No need to fry onion or coconut for this recipe. Though very easy to make it tastes just awesome.

Ingredients

  • 1/2 cup shredded fresh Coconut
  • 7~8 Garlic cloves
  • Coriander leaves
  • Water
  • 3 tsp Oil
  • Finely chopped Onion
  • 1 medium size finely chopped Tomato
  • 1 tbsp Malvani masala
  • 1 1/2 tsp Red chili powder
  • Hot Water
  • Salt to taste
  • Boiled Eggs

Easy anda curry

Instructions

Step 1: Take fresh coconut, garlic, coriander leaves in a blender jar and blend it dry first.

Step 2: Add water and blend everything into paste. Vatan or masala for anda curry is ready.

Step 3: Heat up oil in a pan and add onion.

Step 4: Fry until onion gets nice, even golden color.

Step 5: Add tomato and fry until it is cooked nice and soft.

Step 6: Add Malvani masala, red chili powder and fry everything well together for about 2 minutes.

Step 7: Add the vatan and fry together for about 3-4 minutes.

Step 8: When masala begins to release oil add hot water and mix well. 

Step 9: Add salt and mix well.

Step 10: Simmer the curry on medium heat for about 5-6 minutes.

Step 11: Add eggs and cover it.

Step 12: Cook on medium heat for about 5 minutes.

Step 13: Turn off the gas and anda curry is all ready.

 

Notes

  • You can add water depending upon the consistency of the curry you expect.
  • You can have the curry with rice or goes well with tandalachi bhakari or jwarichi bhakari or with chapatti.
