Ingredients

For Sambar

  • 1/2 cup Tur dal
  • Water
  • 1/2 cup Bottle gourd
  • Chopped Carrot
  • 1 small peeled and chopped Potato
  • 1 chopped Tomato
  • 1 small chopped Onion
  • Water
  • 1 tsp Coriander seeds
  • 1/2 tsp Cumin seeds
  • 8~10 Curry leaves
  • 1 tsp Chana dal
  • 1/2 tsp Urad da
  • Dry red chillies
  • 1/4 tsp Fenugreek seeds
  • 2 tsp grated fresh Coconut
  • Salt to taste
  • 3~4 tsp Tamarind-Jaggery pulp
  • Oil
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • 1/4 tsp Hing
  • 8~10 Curry leaves
  • Dry red chilies

For Chutney

  • 1/2 cup shredded fresh Coconut
  • 2 tbsp Roasted chana dal
  • 3~4 chopped Green chilies
  • Chopped Ginger
  • Small piece of Tamarind
  • Salt to taste
  • Water
  • 1/2 tsp Sugar (Optional)
  • Oil
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • 1/4 tsp Hing
  • Curry leaves
  • Dry red chilies

Instructions

For Sambar

  • Take turdal and wash it really good with water.
  • Add water and keep it aside.
  • Peel and chop bottle gourd into pieces.
  • Transfer them into another cooker pot.
  • Add carrot, potato, tomato, onion and water.
  • In original udupi sambar they add Madrasi kakadi, shevagyachi sheng, brinjal too.  You can use veggies those are available with you and as per your choice.
  • Transfer the pot containing dal at them base and veggies pot on it.
  • Close the lid and cook on medium heat until 4-5 whistles.
  • Heat up a pan on medium heat.
  • Add coriander seeds, cumin seeds, curry leaves, chana dal, urad dal, dry red chilies and fry everything well for about 2-3 minutes until it releases nice aroma.
  • Turn off the gas and add fenugreek seeds.
  • Mix well and transfer everything into a blender jar.
  • Add fresh coconut and blend into fine paste.
  • Add a little water and blend into fine paste. Masala for sambar is all ready.
  • Heat up a pan on medium heat.
  • Add cooked veggies, mashed cooked dal, water, blended masala and mix well.
  • Simmer on medium heat for about 5-6 minutes.
  • Add salt, tamarind-jaggery pulp and simmer on medium heat for another 7-8 minutes.
  • Heat up oil in a tadka pan.
  • Add mustard seeds and let them pop up.
  • Add cumin seeds, hing, curry leaves, dry red chilies and add this tadka in sambar.
  • Mix well and sambar is all ready.

For Chutney

  • Take fresh coconut into a blender jar.
  • Add roasted chana dal, green chilies, ginger, tamarind and blend dry first.
  • Add salt, water to adjust the consistency, sugar and blend everything well again.
  •  Transfer the chutney into a bowl.
  • Heat up oil in a tadka pan.
  • Add mustard seeds and let them pop up.
  • Add cumin seeds, hing, curry leaves, dry red chilies and add this tadka on the chutney.
  • Mix well and chutney is all ready.
