Ingredients

Gurgutya Bhat

  • 1/2 cup sona masuri Rice
  • 3 cups Water
  • Salt to taste

Metkut

  • 1/4 cup Wheat
  • 1/2 cup Chana dal
  • 1/4 cup Urad dal
  • 1/4 cup Moong dal
  • 1/4 cup Rice
  • 1 tbsp Coriander seeds
  • 1 tsp Cumin seeds
  • 10~12 Black peppercorns
  • 10~12 Cloves
  • 1/2 tsp Mustard seeds
  • 4~5 Dry red chilies
  • A piece of Ginger
  • 1/4 tsp Fenugreek seeds
  • Salt to taste
  • 1/2 tsp Turmeric powder

Instructions

Gurgutya Bhat

Step 1: Wash rice really good 3-4 times and transfer it into a pan.

Step 2: Add water, salt and bring it to boil on high heat.

Step 3: When the mixture begins to boil reduce the heat to low.

Step 4: Cover and cook the rice on low heat for about 20 minutes. The rice is ready.

Step 5: It may look runny now but as it cools down it thickens up.

Metkut

Step 6: Heat up a pan on medium heat and add wheat. 

Step 7: Roast until wheat puffs up like popcorn and transfer them into a bowl.

Step 8: In the same pan add chana dal, urad dal, moong dal, rice.

Step 9: Roast everything well together until they change the color a little.

Step 10: When the mixture begins to get light golden color, add coriander seeds, cumin seeds, black peppercorns, cloves, mustard seeds, dry red chilies, dry ginger and roast for another 2-3 minutes.

Step 11: Turn off the gas and add fenugreek seeds.

Step 12: Add roasted wheat and mix well.

Step 13: Let the mixture cool down a little.

Step 14: Transfer the mixture into a blender jar and add salt, turmeric powder.

Step 15: Blend the mixture into fine powder in mixer and strain it. Metkut is all ready.

Notes

  • If you want to have the rice immediately then cook for another 5 minutes.
  • You can store metkut in an airtight container for about 3-4 months.
