Another name for milk cake is kalakand. It just melts in mouth and is a treat for those who really love sweets or burfi. It can be made from very few ingredients easily available in your pantry. Ingredients

  • 2 liters full cream Milk
  • Lemon juice of 1/2 Lemon
  • 1 cup Sugar
  • Ghee

Instructions

  • Coat the base of the kadhai well with a little water and add milk.
  • Heat up the milk on medium heat and bring it to boil.
  • Reduce the milk to half on medium heat for about 45 minutes to 1 hour.
  • Keep on stirring well at the intervals so that milk fats won’t stick to the bottom of the kadhai.
  • When the milk reduces to half add lemon juice.
  • You can add citric acid or vinegar in place of lemon juice.
  • Mix well and continue boiling for the next 15 minutes.
  • When the milk thickens up really good add sugar.
  • Do not add all the sugar at a time.
  • Add 2 tsp sugar at a time and mix well.
  • When the sugar melts add the next 2 tsp sugar.
  • Continue the process till all the sugar is dissolved in the milk.
  • After adding all the sugar, cook the milk until all the moisture from it is removed.
  • Grease a tray well with ghee.
  • Spread a blanket and place the tray on it.
  • Transfer the mixture to the tray and spread evenly quickly.
  • Cover the tray and wrap everything into the blanket.
  • Let it set as it is wrapped in the blanket for about 4-5 hours.
  • It is better if you keep it overnight.
  • Open the blanket and take the tray out.
  • Loosen the edges with a knife and flip the tray over into a dish.
  • Cut the milk cake into pieces of the shape and size you want.
  • Milk cake is all-ready.
  • You can make a little more than 250 grams of milk cake from 2 liters of milk.

Notes

  • If you add all the sugar at a time then the milk cake becomes chewy.
