Ingredients

To Marinate Kolambi:

  • 250 gm Kolambi / Prawns
  • 1 tbsp Ginger-Garlic paste
  • 1/2 tsp Turmeric powder
  • 1 tbsp Red chili powder
  • Lemon juice
  • Salt to taste

To Make Rice:

  • 1 cup Basamati rice
  • 1 tbsp Ginger-Garlic paste
  • 1 cup finely chopped Onion
  • 1/2 cup finely chopped Tomato
  • 1 tbsp Garam masala
  • 2 tsp Red chili powder
  • 1 tbsp Coriander powder
  • Salt to taste
  • Finely chopped Coriander leaves
  • 3 tsp Ghee
  • 1/2 tsp Cumin seeds
  • 4~5 Peppercorns
  • 2 Green cardamom
  • 5~6 Cloves
  • 1 Cinnamon stick
  • 2 Bay leaves

Instructions

To Marinate Kolambi:

  • Devain the kolambi, remove the shell, and black vein from it.
  • Wash it really good and drain all the water from it.
  • To marinate prawns, add ginger-garlic paste, turmeric powder, red chili powder, lemon juice, and salt.
  • Mix well and cover it.
  • Keep it aside to marinate for about 15-20 minutes.

To Make Rice:

  • Take rice in a bowl and wash it really good 3-4 times with water.
  • Add enough water and soak it for about 30 minutes.
  • Heat up ghee in a pan. You can use oil instead of ghee.
  • Add cumin seeds and let it splutter.
  • Add onion and fry until it turns nice golden.
  • When the onion begins to turn nice golden add tomato, ginger-garlic paste, red chili powder, garam masala, coriander powder, and salt.
  • Mix well and fry until tomato is cooked spices release oil.
  • Add marinated kolambi, coriander leaves and mix everything well together.
  • Add a little water and mix well.
  • Cover and cook on medium heat for just about 4-5 minutes.
  • In a pan boil water.
  • Add peppercorns, green cardamom, cloves, cinnamon, bay leaves, salt, and soaked rice.
  • Cook the rice on high heat for about 7-8 minutes.
  • Cook the rice completely.
  • Drain all the water from rice.
  • Transfer the cooked rice into cooked kolambi.
  • Mix everything well together.
  • Cover and steam on lowest possible heat for about 10 minutes.
  • Turn off the gas and kolambi rice is already.

Notes

  • This is small kolambi. It doesn’t take long to cook, just 4-5 minutes on medium heat. If kolmabi is cooked longer then it will get chewy texture.
