Ingredients

  • 375 gm chicken
  • 1 tsp Ginger-Garlic paste
  • 1 tsp Red chili powder
  • 1 tsp Coriander powder
  • 1/2 tsp Turmeric powder
  • Salt to taste
  • 1 tsp Lemon juice
  • 1 tsp Oil
  • 1 tsp Cumin seeds
  • 4 Cloves
  • 7~8 Black peppercorns
  • 1 small piece of Cinnamon
  • Chopped Onion
  • Finely chopped Ginger & Garlic
  • 2 chopped Tomatoes
  • 3~4 tsp Oil
  • 1 tsp Garam masala
  • 1 tsp Coriander powder
  • Red chili powder
  • Salt to taste
  • 1 cup Hot water
  • Kasuri methi

Instructions

  • Take chicken in a bowl and wash it really good.
  • Add ginger-garlic paste, red chili powder, coriander powder, turmeric powder, salt, lemon juice and mix everything well together.
  • When chicken gets nice coating of spices, cover and rest it for about 1 hour to marinate.
  • Heat up oil in a pan.  
  • Add cumin seeds, cloves, black peppercorns, cinnamon, onion, ginger, garlic and fry everything well until it gets nice golden color.
  • When onion begins to get light golden color add tomato and fry until tomato cooks nice and soft.
  • Let it cool down completely.
  • Transfer the roasted masala into a blender jar and blend it into fine paste.
  • Do not add water while blending. Moisture in tomato is enough for blending.
  • Heat up oil in a pan.
  • Add the blended paste and fry for about 5-6 minutes.
  • Add garam masala, coriander powder, red chili powder and mix well.
  • Fry for about 3-4 minutes.
  • I have used kitchen king garam masala.
  • Add marinated chicken and mix well.
  • Cover and cook without adding water for about 6-7 minutes.
  • Add salt, hot water and mix well.
  • While adding salt keep salt added while marinating chicken.
  • You can decide the quantity of hot water according to the consistency of chicken you want.
  • Cover and cook on medium heat until chicken gets cooked for about 15-20 minutes.
  • Crush kasuri methi between your palms and add.
  • Mix well and Punjabi chicken is all ready.
  • You can serve it with naan, roti, paratha.
